    Baked Thai Curry

Chicken breast (or quorn fillets) cut into chunks - brown it in the oven with a smidge of oil first. Put into an oven proof dish with sliced red pepper and onion. Add thai green curry paste, and a can of coconut milk. Add some basmati and wild rice (I use tilda, in the green packet). Top up with water if needed. Baked in the oven until rice is cooked, adding a little water if you need it. Garnish with fresh corriander :)
  • Try n have a look at microwave recipes
Lasagne I boil my mince in microwave and drain fat, I microwave onions.
Mix all ingredients together and layer as normal in silicone square dish or Pyrex.
I always cook rice in my microwave, it's easier and I can't burn it.

Our lovely induction hob would cost £600 to repair or £900 to replace.

So I'm resurecting this thread till we decide what to do. As I'm off sick with only ESA, the decision will take a while, but at least I have time to cook. After three weeks I've run out of inspiration.

What can I cook with an oven, microwave and slow cooker?

And what can i do about my hankering for boiled spring greens? I've been braising red or savoy cabbage, but i think greens would be tough and bitter.

Thanks in advance for your advice and ideas!

Stoodles, sorry don't have time to write any recipes. But to solve your greens problem why not get an electric steamer. I used to use mine all the time. I got it dirt cheap from Argos, I think about 15 pounds. You can do all your veg in it.

I would try pouring boiling water over them and then putting the pan in the oven to keep hot until cooked. All most boiled things need is to sit in hot water until cooked.

    Hi Stoodles,

Bakes and pies are lovely in the oven and you can steam veg by popping them in an oven proof pot with some water at the same time. Alternatively pop them into a bit of tinfoil and pop ontop of the main dish you are cooking in the slow cooker where they'll steam really well.

I often do spring greens in the microwave. You need a little more water than most vegetables but it the result is just the same as using the hob. :)
