Your favourite one pot recipe?

I just started a thread on the Families board about gift suggestions for me to give to my friend who has just had her first baby.

I'd thought about taking a few meals for her freezer, but I'm mostly veggie, so I'm not too wise in the ways of the carnivore. :rolleyes: Can any of you give me some ideas of things I can make in a pyrex dish, for her to throw in the freezer.

  • one really easy one pot meal

    dice chicken breast
    chopped
    onion
    veg - i normally use sweetcorn peas & carrots
    a tin of condensed chicken soup
    herbs

    this can be be cooked in the oven, hob or slow cooker
    serve with rice, pasta, jacket etc

    All my lot eat this and have been known to make one large chicken breast feed 5!!:T

    If you have a gander through the Old Style Indexed Collections you'll find a recipe index so you could decide based on recipes, what you have available, your skill level, your financial level.

    Don't forget to also look through The Mega Index, because there are yet more useful threads which I think might be useful.

  • I make loads of one pot meals as we both have huge appetites and are short of time. I tend to make:

    Casserole - Sausage/Chicken/Beef
    Chilli
    Spag Bol
    Pasta Bake
    Lasagne
    Cheese & Potato Pie

    I've been cooking stews, casseroles, shepherds pie etc for the last couple of weeks before going to work so can reheat when me, DD and OH come home at 6:30. But getting a bit bored with the limited meals I can cook. I've never really had to cook because OH usually does it. But he's now full time. So can I have some really easy but interesting and tasty ideas for my family please?

    I have one I kinda made up in a cupboard clearance. I call it Tuscan beans, but i'm sure italians would contest its authenticity!

    1 x tin kidney beans
    1 x tin borlotti or canellini beans
    1 x tin baked beans (rinsed in colander to remove sauce)
    1 x tin value chopped toms
    1 x ham stock cube made up to 1 pt
    3/4 decent sized potatoes peeled and cut into big chunks (roastie size)
    1 x large onion, chopped
    2 x garlic cloves
    olive oil
    herbs

    heat a little olive oil in the pot, gently sweat the onion and garlic. when softened add all other ingredients except baked beans. Bring to the boil then reduce to simmer. Cover and simmer for 45 mins (or place in oven on low for as long as you need) add baked beans and remove lid. Allow sauce to reduce to whatever consistency you prefer.

    Serve with crusty bread.

    Really stuffing and cheap dinner!

    My d11yo makes this, it's quick, cheap and filling.

    Basically, fry a chopped onion or two and some garlic - we like a lot - then a tin of chickpeas (or a quantity of precooked from dried), a tin of tomatoes, a spoonful of paprika, some mixed herbs, cook for about 15-20 mins and serve with crusty bread :drool: We had this last night and I added some chopped bacon when frying the onions - those cheapy bacon offcuts that you get in a pack. He's made it with chopped pepperami stick, or chorizo too. Topped with a swirl of hm yogurt.
