I second the bean burgers; my 20 month old loves them in a pitta with salad and a little sauce if they've caught slightly in pan (!)

Make them day before and put in fridge - I add the flour anyway but can be omitted.

Very similar flavour to Burger King bean burger but a LOT nicer.

Chilli cheese sandwiches / wraps - grated cheese and grated carrot, kidney beans, chilli sauce (probably sweet chilli as it's for a toddler, although I use the hot stuff ) and enough mayo to make it spreadable.

Bean and chorizo chilli - can be made with any type of salami, and I use a tin of tomatoes and some spices rather than using a ready-made tomato sauce.

Vegetarian chilli - made with lentils rather than minced beef - is one of my favourite veggie meals.

Chilli con carne pasta bake (chilli mixed with pasta and chopped peppers, then topped with grated cheese and baked) is pretty :drool:, too.
