Kidney bean recipes????

Hi Everyone, I was just wondering if anyone had any interesting ideas for what to cook with kidney beans, I love them and from a moneysaving point of view they seem to be great very cheap and full of protein, the problem is the only thing I can think of to make with them is Chilli, does anyone have any good recipies.

    I made a "kidney bean experiment" last week & it was lovely.
    Brown some sausages in a large casserole pot.
    Add some chopped onion, chopped carrot & garlic & fry til soft.
    Soak & boil your kidney beans as normal (or open the tin!) & throw them in the pot along with a tin of chopped tomatoes & some chicken/vegetable stock (I had a couple of glasses of red wine leftover, so that went in too).
    I think a sprig of rosemary from the garden, a couple of bay leaves, a dash of tobasco & S&P went in as well.
    It cooked for about 45 minutes until the sauce was reduced & the sausages completely cooked.

    I do a salad with kidney beans, sweetcorn and chopped spring onions in a dressing made from olive oil and lemon juice, or mayonnaise, sometimes add a wee bit of spice to it with chopped chilli or splash chilli sauce.
    Add some plain boiled rice for a bulkier salad.
    Am sure I have a recipe for kidney bean dip somewhere, will post if I can find it.

    frijoles revueltos which roughly means refried beans

    cook the beans
    mash them up
    add to a pan then add stock and keep stirring on a low heat and keep adding stock until its like a mush peas consistency. I make mine with a veggie stock cube and some chilli powder or cajun seasoning. Good accompaniment, or you can have it in sandwiches or in tortillas with roasted vegetables/meat.

    I add them to macorini cheese, they give it a bit of nutritional value & add texture. They also work well in tacos, fajhitas, lasagne, spag bol, sausage casserole or mixed in with mash or frozen mixed veg.

  • I saw this recipe on a site but cant remember where....

    Mash up 2 tins of kidney beans with a handful of porrige oats and some soy sauce and shape into burgers and fry.............

    Intend to try it out and see.........

    I make a sausage and chilli casserole similar to the "Kidney Bean Experiment" above.

    I brown sausage meat balls and onion.Add cooked kidney beans, tinned tomatoes and chilli powder. Then I top it with slices of french bread and cheese, cover and bake for about 40 mins

    When my vegetarian daughter was living at home I would do her a veggie version with courgettes and mushrooms.

    Chilli Bean Dip
    1 garlic clove finely diced or crushed
    1 onion finely chopped
    2 fresh green chillies - seeded and finely chopped
    (I like hot food so don't bother to seed the chillies!)
    14 oz can kidney beans, drained and rinsed - save the liquid
    3 oz mature cheddar grated
    salt and pepper to taste
    1 red chilli seeded and cut into tiny strips as garnish (optional).
    olive oil/marg or veg oil for sauteing

    Puree kidney beans reserving about 2 tblsp.
    Heat oil in pan and add onion, green chilli and garlic, saute about 5 mins, until onions soft. Add pureed beans to pan, add some of reserved liquid or add water. Heat over low heat stirring frequently until heated through. Add reserved whole kidney beans and grated cheese, stirring all the time, until cheese has melted. Add salt and pepper to taste. Put into serving bowl and decorate with strips of red chilli if using. Serve with pitta bread or tortilla chips.

    Kidney Bean Dip
    14 oz can red kidney beans - drained and rinsed
    4 oz soft cream cheese
    4 tblsp greek yoghourt
    1 small onion finely chopped
    1 garlic clove chopped
    2 tomatoes skinned and diced
    1-2 chillies seeded and finely chopped - or equivalent in chilli powder, paste, sauce
    2 tblsp fresh chopped coriander
    1 tsp lemon juice
    salt and pepper to taste

    Whizz all ingreds in food processor, or blitz with hand blender. Otherwise mash beans into a paste and then combine with other ingredients. Refrigerate.

    Mahal Kidney Beans

    14 oz can kidney beans, rinsed and drained
    marg or olive oil for sauteing
    1 onion finely chopped
    1 clove garlic crushed
    1 tsp ground cumin
    8 oz can tomatoes chopped
    3 tblsp natural or greek yoghourt
    2 tblsp chopped fresh parsley and/or coriander to garnish
    Salt & pepper to taste

    Heat oil/marg in pan, add onion, saute for 5 mins, add garlic, saute 1 min. Add ground cumin, stir over low heat for further 2 mins.
    Add tomatoes and beans, salt and pepper. Cook for 5 - 10 mins stirring occassionally until heated through. Remove from heat and add yoghourt, a little at a time. Heat through gently, stirring frequently, without allowing the mixture to come to the bowl. Transfer into serving dish and garnish with chopped parsley/coriander.

    Serve with chutney and poppadoms or chapatis as a light snack, or serve as an accompaniment to a meat curry.

    these are the bestest and one of my favourites :) i personally just make half this recipe to feed two people

    heat 1tbsp oil in a frying pan. add 1 chopped onion and fry til browning. add one carrot, finely chopped or grated, 1/2 a chopped green pepper and a chopped clove of garlic (although my DH is allergic to garlic so we leave it out) and fry til the carrot is going kinda mushy. add 1/4-1/2tsp chilli powder according to taste and 1tsp coriander and stir for about 2 minutes, then take pan off heat.

    drain 2 425g cans of kidney beans and mash them (I use a blender as mashing takes forever and the burgers don't mix as well). Add to the onion mix with 50g fresh breadcrumbs and mix well. Divide mixture into individual burgers (I make 6 from half the mix but the book actually says 8 from the whole lot which must be huge burgers!). You can freeze them at this point if you want to.

    The book says to cook them in the oven 15-20 minutes on one side then 10-15 mins on the other at 200deg C/gas 6/400deg F, or you can cook from frozen if you shape the burgers before freezing. Just add on 10 minutes for the first side and 5 for the second. We fry them though, but they're difficult to turn over so oven cooking might be better actually (I got this recipe off a friend's mum and only recently found the book she got it from!). We serve them in burger buns (whole white buns actually!) with burger relish but if you get carried away you can add lettuce, tomatoes, onions, mayo, whatever you fancy really! And for anyone who has veggie or vegan friends or relatives and despairs of what to cook for them, well these are great :)

    Ingredeints
    110g/4oz kidny beans
    2 garlic cloves, roughly chopped
    2 tbsp olive oil
    To serve
    2 slices of white bread
    2 tbsp olive oil


    Method
    1. Place the kidney beans, garlic and olive oil into a food processor and blend to a smooth paste.
    2. Drizzle the bread slices with the olive oil.
    3. Heat a griddle pan until hot and toast the bread for two minutes on each side until crisp and golden.
    4. Transfer the hummus to a serving bowl and serve the toasts alongside.

    I'm making a chilli tonight, however as it is just for me, I'll be using less than half the can.

    I'll be putting them into water and keeping in the fridge for a few days.

    Can anyone suggest any meals (that aren't chilli con carne) that I could use the beans for? I can't freeze another portion of chilli as I don't have any room in the freezer and don't have enough mince.
