    dip/ pate - blend with cumin, galric, a squeeze of tom puree or ketchup and use as a dip ir in wraps,

    grate carrot and onion, mash beans and mix in the veg, form into a birger and grill/ fry

    any beans going (usually use kidney, baked beans and anything else around), mixed with chopped tomatoes and cut up sausages, bit of garlic, onion, honey... roast for 30min or so, top with mash and cheese and pop back in oven for a bit. Quick and easy and my kids love it!

    THREE BEAN SALAD

    Makes a big bowl

    INGREDIENTS

    400g tin of borlotti/rose coco beans
    400g tin of cannellini/white kidney beans
    400g tin of red kidney beans
    2 tablespoons of olive oil
    1 tablespoon of lemon juice
    1 tablespoon of parsley

    METHOD

    Open the tins and drain off any liquid, Put the beans into a sieve or colander and rinse them thoroughly under running cold water.

    Put the beans into a bowl. Add the lemon juice, olive oil and parsley. Mix thoroughly.

    Cover and put in the fridge for at least half an hour.

    ADDITIONS & ALTERNATIVES

    Use dried beans, but these will need to be soaked and boiled first.

    Use other beans, including sliced green beans or broad beans. You can use baked beans, but wash the tomato sauce off.

    You can use black-eyed peas, which are really black-eyed beans, and chickpeas, which are also known as garbanzo beans.

    Try to use three different looking beans.

    Use fresh lemon juice for preference, but bottled lemon juice will do. One fresh lemon contains about 2½ tablespoons of juice.

    Use extra virgin olive oil for preference, but normal olive oil will do.

    Use chopped fresh parsley for preference, but dried parsley will do.

    Add a clove of garlic. Peel the garlic and chop it into tiny pieces.

    Add 2 spring onions. Wash the spring onions, cut off the root ends and leaves, peel off and discard any dried up or slimy outer leaves, then chop them into thin rings.

    TIPS

    The drained weight of a tin of beans is usually 240g.

    Parsley is reputed to reduce the wind generating capacity of beans.

    The kidney beans found their way into the freezer. Now frozen into a shape similar to the only gap I could find!

    (I pulled the short straw and ended up with the half sized freezer shelf at the bottom in my uni kitchen :()

    My friend asked me today if I knew any recipes using kidney beans besides the usual chilli and mince. Her toddler loves them but we couldn't think of any unusual recipes to add them to.

    Any ideas, folks?

    Carrot, cumin and kidney bean burgers. Recipe from A Girl Called Jack's blog. Everyone I've made them for loves them.
  • Make a casserole with onion, carrot, celery, kidney beans, stock. Maybe with dumplings?
    Make bean burger from them.
    Tostadas (recipe at bbc good food website)
    You can include them in pretty much any stew/hotpot type dish.
    Make a homemade version of baked beans by cooking them in a basic tomato sauce and serving on toast or as a side.
    Follow a normal hummus recipe, but substitute kidney beans in place of chickpeas (a lot of kids love hummus with veggies, toast soldiers, etc to dip in. Nice finger food)
    Make a shepherd's pie using kidney beans in place of the mince (just google kidney bean shepherd's pie and take your pick).
    Make wraps with kidney beans, salsa, cheese and lettuce.

    I do a few variations of salad using kidney beans.

    Kidney beans, sweetcorn, diced onion or spring onion, mixed with half mayo, half Greek yoghourt, and a squeeze of lemon juice. (You can do all mayo). I like to add some other flavouring such as a dash of sweet chilli sauce, but can be omitted or something else substituted.

    Add rice or pasta for a more filling salad. If used for a main meal, you can add some grated cheese.

    Cook rice in coconut milk with chopped spring onions (and a bit of chilli if the toddler can have that) and add kidney beans for a Jamaican 'rice and peas' dish. Serve with chicken, pork, vegetables, etc. Delicious! Your friend's toddler has good taste :)

    I do a very simple kidney bean salad. Just tin of beans and cucumber (cut cucumber into chucks, its better if your remove the 'pips' in the middle). Mix together with a simple salad dressing.
