    Cleared the cupboards and freezer out and found loads of stuff I had forgotten about found a bag of cooked chicken that I stripped off the bone so we are having chicken curry rice and sweetcorn and for pudding I am going to use the egg white from baking to make a meringue and use a tin of strawberries I won at a school fate and the last of my whipping cream and make dd a eton mess for pudding.

    The egg shells are going in bottom of the oven to dry them out to sprinkle them on my salad plot as they keep the slugs and snails apparently so being frugal as that will save me buying netting for them.

    I've made the Weetabix cake before too - it is awesome and stays lovely and moist for ages. Not that it lasts ages ;)

    deep in - your tea sounds lovely - we're having chicken curry tonight too (in a salady-type sandwich rather than rice) with a few of the rock cakes for pud. Your Eton Mess sounds absolutely g.o.r.g.e.o.u.s!

    I know what your saying try weetabix cake with custard as well its lovely for a quick pudding. dd loved her pudding and used things up as well really getting into this frugal living idea.

    Another pudding I make to use up fresh strawberries is put about 10 in a blender with a tablespoon of strawberry jam blend until smooth and pour over natural yoghurt tastes just like a muller strawberry corner but much cheaper then the brand version and I know dd is getting a portion of fruit that way too. I send her to school with that a lot as she prefers that to eating raw strawberries.

    Not spent a penny today and had such a busy day which has been productive too. :D

    Joined the NSD challenge last night which I am trying to concentrate on sorted my shower gels and perfume etc out and I won't need to buy any for the rest of the year and possibly next year as well as I got loads for Christmas. I was quite shocked I have 30 bottles of shower gel in various sizes and 10 bottles of perfume so I think they might just last me :p.

    Having a no cook dinner tonight me and dd are having chicken stew that's been lurking in the freezer for a while and apple and blackberry crumble for pud as the apples are looking a bit sorry for themselves and the blackberries are from my garden from last year.

    The BFTNE is coming down at the weekend and we are going to do the second coat of gloss so it will all be totally finished.

    dd has a school fate tomorrow so I am going to make rainbow muffins as I didn't realise how many food colourings I have in the back of the cupboard and I think the kids will love them as they look amazing when they are cooked so I guess they won't last very long lol.


    Ingredients

    3/4 cup Self-Rising Flour
    3/4 cup Granulated Sugar
    3/4 cup Unsalted Butter, Softened
    2 Eggs
    1 1/2 tsp Vanilla
    3 tbs Milk
    Red, Blue, Green, and Yellow Food Coloring

    Mixing Bowl
    Measuring Cups
    6 Small Bowls
    Muffin Cups
    Muffin Pan
    Measuring Spoons
    Whisk


    Directions

    Start by pre-heating your oven to 395 degrees.

    In a large mixing bowl, use whisk to beat sugar into butter until creamy and fluffy. The mixture should be light in color.

    Slowly stir in eggs and flour, making sure each is thouroughly stirred in. Mix in Vanilla.

    Stir in milk 1 tablespoon at a time, stirring thoroughly after each tablespoon is added.

    Divide mixture evenly into each of the smaller bowls.

    Add food coloring in this manner:
    Bowl 1- 8 drops red
    Bowl 2- 8 drops yellow, 4 drops red
    Bowl 3- 8 drops yellow
    Bowl 4- 8 drops green
    Bowl 5- 8 drops blue
    Bowl 6- 8 drops blue, 4 drops red

    Mix well until colors are evenly distributed.
    Colors are as follows:
    Bowl 1- Red
    Bowl 2- Orange
    Bowl 3- Yellow
    Bowl 4- Green
    Bowl 5- Blue
    Bowl 6- Purple.

    Line muffin pan with muffin cups. Starting with purple, spoon batter evenly into each of the muffin cups, spreadng slightly. Continue, layering, with blue, then green, then yellow, then orange, then red.

    Bake for 20 minutes at 395 degrees.

    Makes 12 regular-sized cupcakes.

    Number of Servings: 12

    Thank you to sparkrecipes for this. If you haven't tried them trust me anyone with kids should as they are amazing and you can use different colours to the ones mentioned. I made these for my friends engagement and it was a black and white theme so just dyed half of it black and put black and white icing on they looked lovely and my friend asked me to make some for the wedding I ended up making 200 for that too and gave them instead of a wedding present which worked out quite cheap for me as I used all own brand products.

    I need to tidy dd's room today as well little madam is such a messy kid :eek: how can you spend 3 hours cleaning and they can put it back to how it was within 5 minutes flat is beyond me. Well that's my day planned off to actually do something.

    Think I'll make one when I'm on my days off.

    Well done joining the NSD challenge, I'm finding it a bit addictive.

    Today I've been emailing a few companies to see if I can get any samples or vouchers :)

    Oh wow, those rainbow cakes sound amazing. :) Any chance of a pic? I'll be making a cake this weekend too for a relative's birthday. At the moment can't decide between HM coconut cake a la Nigella or having a bash at some profiteroles. Hmm...

    Hope you've had a good day today. Nothing special has happened here, but at least I'm trying hard to stop snacking. Had a small spend today of £4.94 on bacon, eggs & marg but hopefully that's it now, beyond a small hopeful flutter on the lottery. Next big shop is next week!

    Got some really exciting news I have been offered a new job with more money I start on the 2nd July and really excited going to look at the snowball site and see how quickly I can pay my debts off roll on the 2nd :j
