Recipe for chicken dhansak (but would work just as well with quorn)
Serves 4
300g red lentils (or yellow gram lentils)
1 large potato, peeled and roughly chopped
150g fresh spinach, washed thoroughly
450g chicken breast, skin removed and cut into 1 inch cubes
1 onion, peeled and finely sliced
2 tbsp vegetable oil (or 1 tbsp butter)
100g chopped tomatoes (tinned is fine)
2 tbsp Balti Paste (or 2tbsp Garam Masala Paste)
2 tbsp fresh coriander, chopped
salt, to taste
Wash the red lentils in several changes of water and leave to soak while you prepare the other ingredients.
In a pan heat 1 tablespoon of oil and fry the chicken for a few minutes until it is browned on all sides. Remove from the pan and set aside.
In the same pan heat the remaining oil and add the onion. Fry for a few minutes before adding the Balti Paste. Sprinkle in some water and stir well. Leave to cook for 2 minutes before draining the lentils and adding to the pan. Pour in enough water to cover with about 1 cm above the lentils. Allow to cook for 10 minutes before adding in the potatoes. Check there is enough water and add more if required. Stir and leave to cook for a further 10 - 15 minutes, or until the potatoes are cooked through and the lentils are broken down.
Stir in the tomatoes and add the chicken. Bring back to the boil before stirring through the spinach.
Check the seasoning and adjust the salt if necessary.
Finally sprinkle in the fresh coriander and serve with fresh hot basmati rice.0 -
Welcome to the NPT hjd and good luck with the house business.
It's good to know where you stand on mushrooms from early doors, now we just need to establish your proximity to Hertfordshire. Please stay safe in the sun and learn the A-E of melanoma: A = asymmetry, B = irregular borders, C= different colours, D= diameter, larger than 6mm, E = evolving, is your mole changing? Hope you don't mind me invading your thread. I have been a lurker for some time, currently have my house under offer and have had an offer accepted on a house to buy. Early days so fingers crossed. I'm a nice person (some of the time) and I hate mushrooms, but have a chicken dhansak recipe which includes spinach. My daughter is a vegetarian and likes it with quorn. It is fairly mild as it stands so you would need to spice it up a bit more.

Yes, welcome hjd!
Do de-lurk. I was a long-term lurker and look at me now - I can't shut up (seem particularly bad tonight)0 -
Maybe we should have a lurker amnesty? Lurkers could just pop out and say hi and see how thy feel about it?0

I have a brother who lives in Hertfordshire though if that makes any difference.
Afraid I am not usually on the pc late into the evening but usually am early in the morning.0 -
I haven't been lurking, but my favourite recipe is:
2 slices of granary bread, toasted
Lashings of butter
1 can beans (heinz, slow cooked)
Mushrooms to garnish0 -

Surrey's still good;). Early morning there only tend to be a few of us on line, generally anyone with a small holding. I'm not a late person either, so I'll be off soon, but hope you stick around and post a bit more.
I notice fc has been lurking tonight, so just sending a wave:hello:
ETA, sorry, of course I meant smallholding. I guess small holding has a totally different meaning:oPlease stay safe in the sun and learn the A-E of melanoma: A = asymmetry, B = irregular borders, C= different colours, D= diameter, larger than 6mm, E = evolving, is your mole changing?
