    fri chicken curry, chips, nan bread, onion bhajis
    sat oven fish, chips mushy peas
    sun roast chicken dinner, veg & gravy

    I'd like to join this thread please. I usually plan our meals out weekly and am looking for inspiration. We are also dieting. This week (starting from today) I have planned:-

    Tues: piri piri chicken thighs with new potatoes, veggies and side plate of salsa
    Weds: Salmon, noodles, Blue Dragon stir fry sauce (Sainsbury's had fab offer on - box of 3 sachets for £1.00 so bought 2 x boxes this week), stir fry veggies.
    Thurs: We have ready meals on a Thursday because my daughter goes to karate so MrM is usually out dropping her off when I get home from work. Hence we fend for ourselves.
    Fri: Sausages, new potatoes and veggies.

    My week then starts on a Saturday as we food shop Saturday am.
    Back for the No Buying Toiletries challenge. I pledge to only buy when I run out of a product that is not already in my stash no matter what wonderful emails land in in my Inbox or threads I read on MSE re: glitches!

    Are we starting to keep to the same thread for weekly mealplans? Is this to keep the board tidy?

    Funky Mum - I made the chilli in the slow cooker. 50g puy lentils, 50g quinoa, a couple large carrots (diced), about 2-3 onions (diced), a heart of celery (diced), 1 tbsp yeast extract dissolved in about 600ml hot water, 1/2 tsp cinnamon, 1/2 tsp cumin, 1 tbsp dried thyme, 1 bay leaf and 1 tbsp smoked paprika (it was for my young kids as well so you could use as much chilli as you like instead). Pop the slow cooker on. Made more than enough for the four of us.

    MandM - :o I have a blog, but I'm not sure they count as recipes as my approach is really just to throw stuff together as I find it or fancy it :p I know people sometimes put their blog link on their profile but I can't see where I would put it. Ask away on here though... I do!!! Your plans always look yummy and I think someone else's always looks more exciting than our own :D

    This week's plan (lots of easy stuff and treats for half term!):

    Breakfasts
    Wholemeal toast with HM elderflower jelly or HM rhubarb and ginger jam, or fruit n fibre. Soya milk or tea.

    Lunches
    Hummus or peanut butter sarnies and fruit for kids + OH; hummus salads for me. Out quite a few days so the odd bowl of soup/jackets with baked beans/veg nuggets in cafes.

    Teas
    Soya yoghurt with strawberries, raspberries and/or pinepple when we get home from outings.

    Dinners
    Sat: Leftover HM Pizza and baked beans
    Sun: At MILs
    Mon: Jacket pots with hummus, Cauldron marinated tofu pieces and diced tomatoes.
    Tue: (ssh... we got veggie burgers and chips from takeaway :cool:)
    Wed: Thai Green Curry (slow cooker) with Lemon Bay Rice
    Thu: Lasagne with bolognese-style sauce
    Fri: Veggie fingers, HM oven chips and mushy peas with salt and vinegar.... yummy!
    Sat: The kids are at grandparents so we might treat ourselves out somewhere or decide to cook something special on the day
    Sun: Dinner at above-grandparents house when picking up the wee ones.

    I like to think the 2 sundays of free food balances out the lunch treats :D

    Suppers - soya milk for the girls, popcorn or carrots for us to nibble on later.

    • Fry an onion and two/three cloves of garlic in a little oil (I use a smidgen then top up with a little water to keep it low fat)
    • Add 1 heaped teaspoon of ground cumin and 1 heaped teaspoon of Chilli powder and fry for a couple of mins (or leave out if you have kids and put chilli sauce on the adults/split towards the end of cooking and add chilli to one)
    • Add two tins of mixed beans, or one of mixed beans, one of kidney beans*
    • Add a can of chopped tomatoes, a veggie stock cube and 3/4 cup of water.
    • Bring to the boil, reduce heat and simmer for 20 minutes.
    • Throw in a cube of dark choc at the end if you have some, and garnish with chopped coriander if you have it.
    • Season. Serve.

    *Alternatively, soak one and a half cups of dried mixed beans (pinto, roseccoco, kidney, black eyed beans, chickpeas in any mix you fancy. You can also buy cheap bean mixes in the supermarket) overnight. Boil for 10 minutes then simmer for 90 mins. Because it's such a long cooking time I boil up big batches and freeze them in portions that roughly equate to a can, to throw into soups and stews.

    Our meals this week:-

    Saturday: Pizza with salad and salsa
    Sunday: Chicken Fajitas
    Monday: Salmon with rice and Garlic and Ginger sauce and veggies
    Tuesday Salmon with pasta and pasta sauce and veggies
    Wednesday : Sausages and mash and veggies
    Thursday: Ready Meals
    Friday: Smoked cod loin with rice and veggies

    A bit of a fishy week. Trying to be :money: and eat from the freezer. Only item I've had to buy for tea this week is the chicken.

    Do any of you use a good cookbook or website to plan out meals? I really struggle to put plans together that work. Ie I live alone so if I buy a large vegetable, I need to use it in several recipes. Does anyone have any good meal plans for a beginner?

    re: vegetables - we tend to try to use them in different ways ie - stir fried, mixed into a salsa or made into ratatouille.

    For salsa use:-

    cucumber, half a chilli, red onion, tomatoes (if big tomatoes I skin them although prefer cherry tomatoes so leave skins on (they are sweeter), coriander and rice vinegar. Mix all ingredients together and chill.

    For ratatouille:-

    Mix courgette, peppers, onion together with tin a tomatoes. Add herbs to your liking.
