I need all your expect help, I need ideas of healthy menus and shopping plans for a budget of £10 per week for 1 adult, 3 meals a day.
Absolutly nothing in the cupboards/fridge or freeze.
Thanks
This is my first attempt (prices taken from last few weeks shopping at @ldi and @sda.)
If you are a meat eater (as we are) and have nothing in your store cupboard if you could stretch slightly to £10.07 the first week I would buy the following:
6 eggs 85p
oatloaf 89p
chicken thighs 1.99
1kg bananas 68p
bag onions 69p
bag carrots 59p
bag potatoes 49p
porridge oats 500g 55p
bag apples 59p
4pt semi skim milk £1.00
low fat squeezy mayo 89p will last more than 1 week
@sda instant curry sauce 29p
chicken gravy granuals 57p will last more than 1 week
@sda noodles 11p
breakfast
scrambled eggs on toast
poached eggs on toast
porridge with grated apple or mashed banana
I would put the chicken in a large casserole dish with onion and carrot and potatoes, water, salt and pepper if you have any. Once cooked remove& then shred the chicken off the bone and set aside then use it to make the following
lunch
egg & mayo sandwich
chicken & mayo sandwich,
coronation chicken sandwich -mayo mixed with a little curry instant sauce,
coronation chicken on jacket potato,
HM chicken soup
Chicken stew thickened with gravy granuals
plus Banana or apple
tea -
Chicken, jacket potatoes, carrots & gravy.
Chicken in curry sauce with jacket potato or HM potato wedges.
HM chicken noodle soup -

Definitely get a whole chicken if you can. Depends if you can afford to care about welfare/free range but this will do 1 person dinners, sandwiches, risotto and soup. Aldi do a huge pack of carrots - carrot and coriander soup is so cheap and very good for you and filling. We often have also carrot sticks as an after school snack with HM hummous - tin of chick peas/dried and soaked.
Porridge with value honey for breakfast - cheap and filling, use the oats + sunflower oil + value raisins/any dried fruit to make flapjacks/granola for breakfasts and easy snacks.
Lunches - wraps are just less than a pound for about 8 I think in tesco, less in Aldi/Lidl usually. Fill with chicken from the whole one you roasted or hummous and salad.
Dinners - bag of value pasta - used to be 35p but mut be more now - we use with cheesy sauce (cheese, plain flour, butter/Flora) and frozen peas to make the kids' favourite cheesy pasta. By adding chicken/tomato puree/bacon offcuts you can ring the changes.
Rice - again very versatile.
You can easily do it if you REALLY have to and can manage without the sort of choice we are all used to nowadays. I sometimes think it is actually harder for us nowadays as we are exposed to so much choice, what with everyone having cars and supermarkets open 24 hours, so much so that people feel entitled to have whatever, whenever. A couple of years ago, we were snowed in for about 10 days - with a 3 week old baby and a 5 year old. My husband was serving in Afghanistan and I couldn't drive due to a C-section, so we just HAD to make do. We were never ever in danger of starving! thanks to good friends and neighbours who would regularly drop in milk and bread, but because I wasn't physically at the supermarket, I couldn't spend. (The Tesco delivery van couldn't get up the street either!) We had a fair few omelettes (we have our own hens) but we actually had fun making a go of it and using up our (extensive) supplies.
Spend your £10 wisely by meal planning. But remember that starting a store cupboard bit by bit can save lots in the long run. Eg - red lentils= lentil curry/dhal, veg lasagne, soup, flour= pancakes, pastry, muffins, soda bread, white sauce, even HM pasta if you have time! Basically, the more basic the ingredient, the more you can "add value" to it. Good luck with everything else going on, as well as the meal planning.

I think if you have only £10 a week things can get a bit repetative whereas if you could get your shopping in one go for the month you could have more choice, but circumstances dictate I suppose.
