    OMG tiramisu is the only dessert I miss..........when you go, see if you can sneak a peek at the recipe for me ;):rotfl::rotfl::rotfl: Cor I am envious, it does look a good menu :T but I'm offsetting it with my mates raw brownie! ;)

    OK here it is (from their recipe book). Haven't made it - some obscure ingredients etc.
    The one we had there was one of the best desserts ever!

    Anyway here we go..

    FOR THE CAKE
    1.5 cups well-packed, chopped dates
    .5 cup coconut butter
    .5 teaspoon salt
    2 tablespoons vanilla
    30 ounces almond flour
    8 ounces cold-processed espresso (guess you could use regular)

    FOR THE CACAO MOUSSE
    .5 ounce Irish Moss (see what I mean)
    1.5 cups almond milk
    .25 up + 1 teaspoon of well-packed, finely chopped dates
    .25 cup agave nectar (Holland and Barrett sell it)
    2 tablespoons vanilla
    1/8 teaspoon salt
    1/3 cup cacao powder
    1 tablespoon lecithin
    Scant (?) 1/2 cup raw unscented coconut butter

    FOR THE WHIPPED CREAM (whoop!)
    2.25 cups coconut milk
    1.25 cups soaked cashews (6 hrs or so soaked in water to soften)
    1/2 cup and 2 tablespoons agave nectar
    2 tablespoons vanilla
    1/8 teaspoon salt
    2 tablespoons lecithin
    2/3rds cup raw unscented coconut butter

    GARNISH
    .25 cup cacao powder

    ok here goes

    TO MAKE THE CAKE
    First puree the dates in a food processor. To create a fine paste, you may need to add a little water. In a mixer with flat paddle at low speed, mix date, coconut butter, vanilla and salt until smooth. Add flour and mix at higher speed until well incorporated. Remove from mixer and separate into two equal portions. Grease pan (with unscented coconut butter) and form an even layer on bottom of the pan with one portion. soak this layer with half of the espresso (4 ounces). Allow espresso to soak in.

    TO MAKE THE MOUSSE
    Blend Irish Moss with .5 cup of milk until dissolved, smooth, and thick. Add remaining milk, date, agave, vanilla, salt and cacao powder, and blend until smooth. add lecithin and coconut butter until well incorporated. Pour onto the cake layer. Set in fridge/freezer for about an hour. Once set, layer the other cake portion on top of the mousse and soak cake with remaining espresso. Return to fridge/freezer until ready to top with whipped cream.

    TO MAKE THE WHIPPED CREAM
    Blend all the ingredients except lecithin and coconut butter until smooth., Then add lecithin and coconut butter, blending until well incorporated. Pour onto cake and set in fridge/freezer (about an hour). ONce set dust with cacao powder in an even layer..

    I currently eat meat and fish, but have considerably reduced the amounts I eat.

    For environmental reasons, as well as health benefits, I believe that a vegan diet is the way forward for me.

    Can I ask whether posters to this thread gradually moved from eating meat to vegetarianism to veganism, or whether they plunged straight in?

    In either case, were there any adverse effects? I have suffered digestive problems in the past and would like to minimise the possibility of future problems if I can.

    hi all, ive been vegan for 8 years (quite a long time considering im 18), never really ate meat before that though. regarding money though to keep costs down i buy the value range of soya milks and adore the 20p tins of kidney beans ... to the poster aboe me, make sure your fluid intake is good and maybe opt for less gas producing vegetables, and try alternative protiens to beans such as tofu, but hey theres a whole load of vegan products out thers, my fave are alpro soya dessserts especially the choc and caramel ones

    if anyone needs to know anything just ask!

    Personally everything I did was gradual..............until going vegan because in food terms all that then meant was cutting out cheese and eggs by then :D

    I reckon transitioning slowly is best as it gives your body time to adjust with toxins being expelled, forms better habits, allows your pallette to change for the better and is an easier learning curve ;)

    Just gotta share this with you guys, there was a prog in America called Cupcake Wars and Chole Coscarelli (a vegan chef) won it :T...........with vegan cupcakes all the throughout the competition! :j

    OMG!!!!!!!!!!!!!!!!!!! I have just baked the Choc Strawberry Cupcake and nicked one as it's cooled, so there's no buttercream or strawberries yet..................and that is the BEST ever vegan cupcake I have EVER had................and it absolutely can't be anything to do with my cooking, it has to be the recipe!!! :T:T:T:T It's so light and yet totally moist. Oh should admit that as usual I changed something :o I used fruit sugar instead of sugar because that's all I had (we don't have much sugar in the house) and I used Dove's farm gluten free plain flour.

    Can't wait to ice them up and hit them with strawberries :j:j
