Due to the way the sunset mode boosts certain colour ranges it does have a kind of warm glow to it that I'm not entirely happy with so popped it into a free photo program downloadable off tinternet (in this case irfanview) and I can take out some red with a 2 second drag of a slider. Much nicer than pic 1 and with tiny amounts of thought and experimentation.
In my photography prefer to underexpose by 2 stops or more depending on how i'm feeling. I also do this because it is much easier to recover detail from darker areas than overblown highlights.
FK - i'd like to see your pics when you put it in manual mode - so much more creativity. Challenge if you choose to accept a bird pic or whatever with a lovely bokeh
