    Does anybody have any ideas for breakfast? I'm following EE and struggling a bit - I'm not a fan of mushrooms or "big" tomatoes so breakfast of egg/potatoes misses out a "superfree" - I might have to try and get some cherry tomatoes and see if they cook okay!

    Would a "breakfast" fritatta work? Thinking that that might be something I could do one morning and have half one day, half the next type thing...

    I had cereal this morning with 1% milk, and have some milk for tea for the day...

    Will have to put myself a list together for shopping later I think.

    Bacon, egg and beans? Not a mushroom fan(morelike loath them, tomatoes too) Bacon peppers onion omlette?

    just had another patronising interview at the job centre and I've ended up eating a bacon buttie, meat and potato pastie and a cornflake cake whilst waiting for DH to have his. feel even worse now!

    You can pull today back - Flexi-syn it, it's only half the day gone after all. mmmm, meat and potato pasty...
    tut Ms Squid, here I am with a salad...;) I could just devour a pastie.A Syn free Pitta steak bake tommorrow for me I think...thank you for the inspiration. ;)
    I wonder how many folk that do these Job Interviews have been through half the things we have.

    I have fruit and yog for breakfast, or fruit yog and alpen if I don't mind usign a HEB

    I've also made mini fritattas in muffin tins and am thinking of those for breakfast too

  • Thanks for ideas :-) I was veggie for around 15 years so the only meat I now eat is chicken very occassionaly (and that's more down to convenience when eating out than anything else!).

    I think a fritatta with veggies in it will work well and will try that :-)

    I wish peas were superfree, I could happily eat them all day!!

    I think you should try and stock up your freezer with lots of frozen veggies, they are going to be your saviour. Make a list of tinned items such as tomatoes, tuna, baked beans and stock up on these when you do a big shop.

    I'm not a big fruit lover but I keep frozen berries in the freezer and mix them in with yoghurt. I don't mind fruit salad so if I have an apple, pear, kiwi and some melon I'll chop them all up together.

    I agree with Medmum, I keep (as a minimum) in my freezer, onions, cabbage, sliced mixed peppers, sweetcorn, mushrooms, brocolli, cauliflower, brussel sprouts and Aldi frozen summer fruits, only £1.39 (and they do me 5 x brekkies with natural yoghurt)

    Don't you just look round sometimes and think who the hell said that - and OMG it was me!!!!!! - happens to me lots although have to say I've learned to tame it a bit over the years but yes, need to learn to engage brain before mouth!!!!

    Wow that's even more than I've got and I thought I had a lot in my freezer but yes totally rely on frozen veg and actually read somewhere that they're healthier because they retain the nutrients as they're frozen at their freshest.

    I remember you from the flylady thread GnB, all I can say is my insides must be made of stern stuff :rotfl:I have eaten Dyno Rod soup every day as well as all my other veggies etc, lactulose at night before bed and am now on my third day with no poo :o funny thing is, last time I was at docs I had been twice in the morning which is unheard of (but it was a bit of the old diarrogey) and the doc said I was really bunged up !!!!!!????? Sorry I am talking a pile of poo now :o

    Spray a medium sized frying pan with frylight and put on the gas.
    Chop up an onion and any other veggies that you fancy (fresh or frozen).
    Add them to the pan and stir fry for a few mins.
    Beat a couple of eggs with seasoning and a splash of water.
    Add to the veggies and swirl around until the pan is covered with the egg.
    Let it set without touching it.
    Meanwhile heat the grill.
    Sprinkle over the grated cheese.
    Take the pan off the gas and put it under the grill and let the grill set the top of the frittata and toast the cheese.
    Slide it out on to a plate.
    Eat and enjoy!

    Some people (and I think the traditional recipe too) add chopped cooked potato. I've done this if I've made it for an evening meal but can't face the thought of potatoes for breakfast.

    Foir mine i start by sauting onion (in spray obvs), adding whatever veg I have - usually spinach, mushrooms, sometimes leeks, pepper, courgette. I beat 8 eggs in a bowl, tip in the cooked veg, season well with salt and pepper and fresh herbs if you like. Then spray a muffin tin and pour in the egg mixture - bake at arond 180 for 20 mins or til set.

    No cheese in mine so its free on any day :0)
