What's your signature dish?

I thought I'd ask, as I'm looking for some inspiration.:) What's your signature dish? i.e. the one meal that you could cook with your eyes closed, that always tastes great?

Looking forward to hearing your answers.:D

    Part of the Furniture Combo Breaker Mortgage-free Glee!
    Starter would be either mackrell pate or avocado with orange segments and raspberry coulis.
    Main would be roast chicken, roast potatoes, veg and yorkshire puddings.
    Dessert is chocolate pots (individual chocolate cakes with the runny middles).
    Yummy, feeling hungry now!!!!
    Mind you, these are prob the only things i do cook for others!!!

    Sounds yummy:) How do you actually made a coulis? I've never tried...

    I simply blitz fresh raspberries with my hand blender into a sauce - if using for a dessert, i would add a little caster sugar, but for a starter its nicer being a bit sharp.

    Ditto - chocolate recipe sounds good too.:)

    My signature dish is pasta in a cheesy sauce, but am looking for some new ideas. Am cooking dinner for someone special next month and want to pinch all of your best ideas. ;)

    Main - Mince n totties, carbonara, bolegnese or lasagne.
    Pudding - strawbs cream and meringues, choccie brownies :drool:
