Homemade Pasta?

Hello everyone,
I've tried this and it works really well, i had a quick look at the other threads and i hope it hasn't been put on before (the other ones looked quite complicated!!).
(Makes enough for 4 people)
400g Plain Flour
4 Large Eggs
Sift the flour into a bowl and make a hole in the middle. Break the eggs into the hole and whisk them into the flour. Continue to mix them together with your fingers. Once it becomes a dough wrap it in a teatowel and leave on the side for 15mins (for a little rest!!). Then turn it out onto a lightly floured surface and knead it for 5 minutes, adding more flour if it is too sticky. Then if you don't have a pasta machine take a rolling pin, roll and strech the dough until it is so thin you could see newspaper print through it (it takes a little while but its really worth it!!).
Then cut into shapes you could make bow-ties or lasagne sheets etc... Also you can dry the pasta out and it will keep in the fridge for around 4 days.
To cook it from fresh only takes 1-2 minutes and the dried one takes 3-4 minutes.
We made this last night and it was really yummy.

We picked up a pasta machine at a car boot sale last year (an unused wedding present and very good quality). OH loves producing spagetti with it - so ours gets used every week. He is extremely careful about cleaning it afterwards (picking out the remaining pasta with a cocktail stick).
I know dried pasta is probably cheaper (OH uses 00 flour and free range eggs) but the pasta he makes is deliciousEnjoying an MSE OS life0 -

Homemade pasta is in a league all its own... made it for the first time last week and it turned out great, even using a recipe without eggs.I want to move to theory. Everything works in theory.0 -
I used to make my own when I had more time on my hands.
When rolling it I would sprinkle dried herbs/seasoning over it before folding it/rolling it again. Good ones to try are pepper, garlic, thyme, basil. Really makes for tasty pasta and looks so impressive even though it takes just an extra second!0 -
Anyone here make there own?
I was thinking of asking for a pasta maker for my birthday, but did wonder if it was more likely that it would end up gathering dust at the back of the cuboard if its quite time consuming or fidley.
Is there is a huge difference in taste between homemade and dried pasta?

Hi there, I bought one last week. It is a bit of a performance. The ingredients are easy enough 4oz of plain flour and an egg. The result does taste nicer then bought pasta in my opinion. From my recent experience you need a long stretch of kitchen unit clear as it gets very long the thinner it gets. And one person to feed it in and another to catch it on the way out, and a handy chair back to hang it on. We have done it a few times now.Anyone who lives within their means suffers from a lack of imagination:beer:

You can get some lovely results using free range eggs and a half and half mix of semolina flour and normal flour. I've been thinking about one of these as I refuse to pay the price they charge for fresh pasta, but I love it.
Does it work using wholemeal flour? we always buy wholewheat dried pasta.0
