I use 00 flour - this is what I learned to make it with in Italy. Some supermarkets stock Italian brands in their speciality ranges, but Mc Dougalls do one (it's labelled for supreme sauces or something - doen't mention pasta) which is probably a bit cheaper. I've never tried it with regular flour - I'm sure someone on here will be able to advise. I've never bought in bulk - don't make pasta often enough. It's worth the hassle though. HM lasagne is great (cook sheets in boiling water for a few minutes) so soft and thin - I don't buy dry lasagne anymore.

Waitrose's "very Strong Canadian White Flour" is suitable for breadmaking and pasta making, and comes in 1.5KG bags, costs £1.15
If you want reasonably large quantities of type 00 flour (pasta flour) then Shipton Mill is very good. The more flour you order, the cheaper per kilo it is, and you can order any combination of flours. http://www.shipton-mill.com/shop.php0 -
they say use paster flour because it is milled a lot finer than nornal flour so gives a softer dough if you use normal flour your dough will be heavier and not as nice0

Does anyone know of a website with instructions on how to make pasta from scratch? Not a video tutorial, just pics and words. My daughter has homework from cookery class, we've both tried searching but can't find anything.0

Does anyone have a recipe for homemade pasta using normal flour as oppose to the semolina flour?

6 oz (180g) unbleached flour - I use Dove pasta flour, or bread flour
2 extra large eggs
Add eggs to flour and mix well. Knead the dough by continually folding it in half and pressing it flat with the heel of your hand. Do this until the dough is smooth and silky. Put dough in a bowl, cover and leave for an hour.
