    Hi,

    I make HM pasta and I have to say I'm loving it. I find it therapeutic easy and fun. My issue is the drying process and storing. I'v dried it over a broom that's between 2 chairs with a t-towel on top. I found it brittle after some time and just fell all over my table. Last time I part dried on hangers then covered in semolina on a tray to finish it off. then I was left with a huge nest of tagliatelle that i've squished and broken to fit into a tupperware box. Should I freeze it once dried or will it keep for quite a while since it's been dried? It does have eggs in, I been reading it'll only keep for 3 days not frozen, is this right?

    Any advise on drying or storage? I would be very thankful.
    Opinion on everything, knowledge of nothing.
