Yes yes yes cheesecake is my thing!!! It's my fave recipe ever and so easy but no good for those on a diet as you will see...
1 can condensed milk
1 300ml ish pot double cream, or elmlea but not quite as good
3 large or 4 small lemons or limes
base is 225g digestive or ginger biscuits
75g butter
Bash biscuits and melt butter, mix, put in bottom of pan and put in freezer.
For topping , zest and juice the lemons, tip in the condensed milk and cream and whisk, it will thicken really fast.
Get base out of freezer, pour topping on , leave to set 6 hours ish. You can cut up pieces to freeze too.
This feeds 8 people generously so you can halve it too.
Even my dessert hating friend Ros adores this and she made it for her Xmas dinner, I was so proud!!

terri - join in. We really are a friendly bunch and I'm sure it helps others feel less isolated/light at the end of a tunnel type thing when they can read that others have experienced what they are/have experienced and got thro it. There are so many people on here from 'all sorts of walks of life' and sometimes it is the little things that people write that may make you think, yes I can do/try that. I'm sure your experiences would help someone else/their self esteem etc. Generally, a bit of banter does us all good. Welcome.:wave:0 -

Another easy cheesecake recipe... (it has to be easy as even I can make it!!)
Dissolve 1 lemon jelly and 1/4 pint of boiling water then make up to 1/2 pint with cold water.
Melt 3oz butter and mix in 6 oz crushed digestive buiscuits.
Press into an 8inch base tin and cool in the fridge.
Beat together 8oz philadelphia and 1/2 pint double (or whipping) cream until smooth.
Whisk in jelly mixture and grated rind of 1 lemon (I put the juice in too)
Place jelly mixture onto the biscuit base and stick in the fridge until set...

Cheesecake sounds yummy. Might have to have a go at this and freeze it in single portions as DH won't eat it:oI love to help people by sharing my bargains:o0
