Thanks!! That's exactly the link I was looking for & couldn't find. Made these cookies and they are everything other posters have said they are.0 -
apparently the key to getting a chewy cookie rather than a crispy one is to get the tray out half way through cooking , cover with a tea towel and bang on the work surface, then put back in the oven to finish cooking.
Not tried it myself but i think i will have a go next time0 -
They look nice Jammy I am having a bake up session now for next week whilst the kids will be off. I am doing some twinks so will bang some of these in as well. Will use up some of the leftover dried fruit from crimbo cranberries and such.

i think the key to a chewy cookie is golden caster sugar. every recipe i have done that uses is comes out nice and chewy.Opinion on everything, knowledge of nothing.0

I have an unbelievably good cookie recipe, based on research from all sorts of specialist NY bakeries. I now make all my basic cookies this way. Two main tips:
1. Add a lot more of the chocolate chips/nuts etc. than you think - seems a ridiculous amount when you make the mixture, but when they spread out they're fine.
2. For the proper soft/chewy/slightly crisp to the edges feel - that doesn't harden when cold, or go floppy, make the cookies into a sausage, roll up in tinfoil and leave in the fridge for a minimum of 24 hours and a maximum of 36. Apparently the delay makes the outside of the cookie very slightly dryer so you get the perfect crisp/chewy combination. Anyway, here's the link from instructables. I now make loads at once and refrigerate for 24 hrs then keep the rolls in the freezer. I won't ever make an american-style cookie any other way.

There's a girl on the net with a blog called Lauren Smiths Millies cookies recipe, they are so easy to make and taste amazing my dd loves to bake them for her friends. Hope this helps.0
