Really nice chewy & soft HM cookies

I absolutely love the soft doughy cookies that you buy from the likes of Millies etc but they cost a fortune.
Whenever I've tried to make these myself they end up crunchy rather than soft.
Does anyone have a recipe for these??

Have a look at this thread, post 13, Smartie cookies by foreverskint. I've recommended this recipe before, it works well. (but I add a little more flour and do flatten the dough a little before baking)
Also have a look at the Bero website. The recipe for chocolate chip cookies is good-but I add quite a lot of extra flour to this recipe as otherwise the dough is very sticky and difficult to work with.0 -
Also make sure you 'underbake' them - to get that 'squishy' cookie texture you need to be brave and take them out before you think they're actually done

Tbh I'm not sure that you're ever going to get the real bought cookie texture and taste - from what I've seen of the ingredients they tend to have various types of syrups in them (glucose, corn) so that they don't go hard. You can have a go at replicating this at home but you're probably always going to end up with a cookie that veers towards the crunchy rather than the squishy.0 -
Don't ask me because I've just "burnt" some oatmeal cookies this morning! Only three of them were properly burnt but the rest are more browned than I would like - and I checked them five minutes before they were supposed to be done.0

This is the Nestle Toll House cookie recipe, widely agreed in America to be the best chocolate chip cookie recipe ever. If you slightly under-cook them, I can guarantee that they'll be better than any store-bought cookies!
Oh, and nuts are definitely optional.0 -
I am a regular cookie baker and I agree with the previous posters that the only way to get them soft rather than crunchy is to undercook them. Trust us!! Take them out of the oven as soon as one of them starts to turn golden brown at one of the edges. You'll probably think they won't be cooked but just leave then to cool and you'll soon find you have lovely chewy cookies!0

If you have a be-ro cook book the choc chip cookie recipe in that made with golden syrup is just like the ones from Millie's cookies at a fraction of the price, and so easy!0

And if they're too crunchy for you, throw a piece of bread into the cookie jar with them. The moisture in the bread will help soften them up.
The Toll-House recipe is fab, and under-baking is definitely the way to go.
Also this recipe for Oatmeal Raisin - yum, yum.
