I think if I were you I would start with a one-meat meatloaf (you could always make 3 of these). My reasoning is that your cooking is generally a very high standard
and so you will need to know how much the deliciousness of your result is due to it being OS HM before you do a mixed meat recipe so you can identify how much deliciousness is due to the mix of the meats (and thus come to an informed decision about whether the extra effort of mixing the meats is worth it).
If you want a really delicious mix, lamb or beef with root ginger and garlic takes a lot of beating. You can add some chopped green chillies if you want a really kebab feel to it....;)Ex board guide. Signature now changed (if you know, you know).0 -
I agree with the other posters on here who think a mixture of meats/flavourings might be a bit strange. I'm not sure a mix of 3 meats and several flavourings would work well - it could put you off meatloaf for life.
Also recipes that mix a binder, like sausagemeat with chunks of meat/poultry, so that the chunks are the major ingredient, are actually terrines (Hugh Fearnley-Whittingstall did a fantastic game one on River Cottage). A meatloaf is a minced/mashed concoction that has the same texture throughout. Just had me lunch and I`m starving already reading that!
Will be keeping an eye out on the progress as I would like to try and do one of these too.I`m not good with following instructions I`m more of a chuck it all in and see what happens type of person.

If you like food that is heavy on the meat, you might like to try a Turducken, my son had one for Thanksgiving this year, it's a turkey stuffed with a duck stuffed with a chicken, nothing to do with meat loaf though, lol!

Ok...I've stalled a bit here because I don't think I've got the right stuff to cook it...
The recipes say it needs to go in a roasting tin full of water. I haven't got one.

A roasting with water in it is also known as a water bath or a bain marie. You put your meat loaf tin in this so that the loaf cooks gently as the heat is transferred through the water to the loaf tin. It also creates a humid atmosphere in the oven which stops your loaf from drying out.
So any tin larger than your loaf tin and with sides to hold water in would be fine. Does the handle come off your grill pan for example?
If you can't find a tin then perhaps you could cook the loaf just in the loaf in but put a small cake pan with water in it on the shelf below to at least add a bit of humidity. And test the loaf before the end of the cooking time to check it's not overdone
