In recognition of the fact that so many people were thoughtful enough to ask after me when I fell off the web, I feel I ought to cook.
This time I would like to make meatloaf. However, I don't want your ordinary run-of-the-mill meatloaf. (I have searched the forum but can't find quite what I'm after).
I don't know if any of you remember it, but in one episode of the Two Fat Ladies, Clarissa (IIRC) made meatloaf. It had 3 or 4 different meats in, and was all wrapped up in bacon. To be frank, it was the mother of all meatloafs.
And that's the one I want. :drool:
Can anyone help me out with a recipe please? The exact one would be ideal, but similar would suffice. Oh, and would I need a mincer, as I haven't got one.
I might even consider making a pudding.

My attempts at following 2FL recipes (from their books) have been a disaster! They're just not reliable to the same degree as Delia (and I'm an OK cook!)
I'm not saying an excellent 'meat-with-extra-meat' recipe isn't out there , but I'm not sure if the 2FL one would be best. (Maybe meatloaf is harder to **** up than the dishes I've tried...!)0 -
I wonder if you could get 3 different types of mince ( lamb , beef and turkey for example ) , the make up 3 different meatloaf mixes , then line your loaf tin with bacon and layer up the meatloaf mixes
I make my meatloaf mix with some mince , Worcester sauce , and a bit of oatmeal. You could try using a packet soup and soured cream as a binder ( french onion works well for this )0 -

How good are the instructions? I have terrible trouble if they're remotely vague.I can't see meatloaf being that difficult though?

Hmmm...layers...now that would work well I think. I can't remember exactly how Clarissa did it, I just know there were a few different meats. It was years ago and I've hankered after it ever since. :drool:If you lend someone a tenner and never see them again, it was probably worth it.0 -

American Meatloaf
Ingredients
1 lb (450 g) minced beef
1 lb (450 g) minced pork
2 medium onions, very finely chopped
2 cloves garlic, peeled
3 heaped tablespoons chopped fresh parsley
1 level dessertspoon chopped fresh thyme
1 large egg
3 oz (75 g) white bread, sliced and crusts removed, cut into 1 inch (2.5 cm) cubes
3 tablespoons milk
1½ rounded teaspoons mustard powder
2 tablespoons Worcestershire sauce
4 fl oz (110 ml) dry white wine
about 8 slices (6 oz/175 g) traditional smoked streaky bacon
salt and freshly milled black pepper
Pre-heat the oven to gas mark 2, 300°F (150°C).
You will also need a 2 lb (900 g) loaf tin, 7½ x 4¾ x 3½ inches deep (19 x 12 x 9 cm deep), preferably non-stick.

hello mr b nice to see you back :hello: i do my meat loaf by lining the tin with bacon and have enough spare either side to flap back over the top iyswim.. then i press in it alternate layers of cooked chicken breast and mr t`s cooking bacon pieces (cooked) and stuffing mix and caramelised onions and any other meat i have knocking around sometimes beef or roast pork press it all down firmly then lay bacon across the top and flap the remaining bacon over the top and bake in the oven till the bacon is nice and sizzleing and it is gorgeous sliced with mash veg and gravy or even in sarnies, you cant really go wrong cooking this dish just throw whatever you have in it and im sure it will turn out fab...best of luck angchrisproper prior planning prevents !!!!!! poor performance!Only when the last tree has died and the last river been poisoned and the last fish been caught will we realise we cannot eat moneyquote from an american indian.0

woo - good to see you back MrBE. Meatloaf - I haven't had a home made version of that since my grandad used to make it - unfortunately he died quite some time ago and his recipe went with him
. I have my own cooking issue to deal with at the mo as my weetabix brownies fell apart on me but I'll be tuning in to see your progress. Good luck!:dance:
