I can also do you Minced Meat Roll. Basically mince, onion and breadcrumbs in puff pastry. Very filling, and it only uses 250g of meat.

I bought something like that from Tescos? that was mixed with Sausagemeat, didn't taste very nice but when I made my own it was yummy, especially as I put a layer of Onion Marmalade in on the pastry as well.

This recipe is new (I was looking for different things to do with minced meat, too) and is the only one for minced meat I've found so far that's done in the oven. And, as I said, very filling and uses just 250g of meat. I can't see that I've posted it before, so here it is ...

    MINCED MEAT ROLL

Makes 1 large roll for 2 people or 2 individual ones

    INGREDIENTS

1 sheet (½ a packet) of frozen ready rolled puff pastry
    1 slice of bread
    1 clove of garlic
    ½ an onion
    1 tablespoon of dried parsley
¼ of a teaspoon of ground black pepper
    250g of minced meat
    1 beef stock cube
    1 egg
    Some milk
    Some oil
    Some more milk

    DEFROSTING

Defrost the frozen pastry according to the instructions on the packet.

    METHOD

Crumble the bread into breadcrumbs. Peel the garlic and chop it into tiny pieces. Peel the onion, cut it in half, chop one half into tiny pieces and save the other half.

Put the breadcrumbs, garlic, onion, parsley and pepper into a bowl. Mix thoroughly. Add the minced beef. Crumble in the stock cube. Mix thoroughly. Break the egg into the bowl and pick out any bits of shell. Mix thoroughly.

Unroll the pastry. If you are making two small rolls, cut it in half and divide the meat mixture. Put the meat mixture on the middle of the pastry in a sausage shape. Pull the pastry over the top, so it overlaps. Moisten the edges and ends with some milk and gently press them together.

Rub some oil onto a baking tray. Put the roll(s) on the tray. Brush the pastry with some more milk, which will make it come out of the oven shiny. Make a hole in the top of the pastry, so the steam can get out as it cooks.

Cook in a preheated oven at 200°C, 400°F, gas mark 6 for 30 minutes.

    ADDITIONS & ALTERNATIVES

Use minced beef, lamb, pork or turkey.

You can make a vegetarian version, with minced Quorn or any other mince substitute, and a vegetable stock cube.

Use mixed herbs instead of parsley.
The acquisition of wealth is no longer the driving force in my life. :)

Baked mince - shove a couple of onions in the food processor and whizz them up, add the beef and mix well. Pop into a lightly oiled loaf tin, cover with foil and bake for around half an hour, remove foil, tip out any excess juices and cook uncovered for another 20mins or so.

Slices really well so great hot or cold in place of roast meats.

If that thread doesn't contain my recipe for Keema (Hindi for minced meat) Curry, let me know.

    PS. I've checked. It does.

I love this way of cooking mince - great dish in the winter :)
At least the fish fingers are still frozen, that's what I keep telling myself (Truly Madly Deeply)

  • Has anybody mentioned Pastitsio yet? Delicious and a lovely dish for the winter.

My mum used to make something called talarina, I did google a recipe for it once but it wasn't the same as ours because we used Campbell's condensed tomato soup in it.

    Meatloaf (American terminology)

    2 pounds ground beef
    2 ribs celery finely chopped
    1 small onion finely chopped
    1 green pepper finely chopped
    1/2 teaspoon ground black pepper
    1/2 teaspoon salt
2 teaspoons Worcester Sauce (not sure of spelling)
    dash ground cumin

    dash ground cumin
1/2 to 1 Cup bread crumbs (depends on how wet your beef is)
    1 egg

Mix all ingredients together, form into a loaf, place in a baking dish. bake in a 350F oven for 45 minutes to 1 hour (check internal temp to ensure it's cooked through).

    Glaze:

    3/4 Cup Ketchup
    1/4 Cup packed brown sugar
    1 Tablespoon Molasses
    Dash black pepper
    Dash Cumin

microwave in a glass bowl 2 minutes, stir, microwave again 1 minute. Pour over meat loaf when it's done, bake until the top is bubbly

Tattie Hash (or that's what my OH calls it)

Mince, Onion, potatoes, sliced carrot, beef stock, seasoning to taste
brown the mince and then add all the ingredients, bring to the boil and simmer until potatoes and carrots are cooked.
Make a huge amount and reheat the next day as it tastes better then
Note: - can be thickened to serve
  • BBC Good Foods' sloppy joe bake used to be popular with my ex's family - basically a sort of ragu, then topped with garlic bread slices and baked! http://www.bbcgoodfood.com/recipes/9972/sloppy-joe-bake

Its been a while but from memory this sort of Mexican bake was tasty - make up a batch of chilli, fill tortilla wraps, fold into parcels and snuggle up into a baking dish, seam side down, pour over passata let down with a splash of milk, top with grated cheese and mozzarella torn up and bake for around 25 minutes until bubbling and piping hot. I like Jo Pratt's chilli recipe http://www.bbc.co.uk/food/recipes/chilliconcarne_67875

This is a piccie I found of it uncooked:[IMG][/img]6711037243_641b7e7a6c.jpg
