Meatball curry is also very nice, made one a year or so ago, can't remember the exact recipe but I can give you an idea.
- Finely chop and fry an onion, a finely chopped chilli,a couple of crushed cloves of garlic and some grated ginger, leave to cool then add to the mince(a 500g packet)
- Maybe add a bit of garam masala or curry powder to the meat too.
- Shaped the meat into meatballs and brown in some oil in a large pan(i use my cast iron casserole thingy)
- Remove meatballs, then fry a chopped onion, couple of cloves of crushed garlic and pepper in the same pan
- When soft add a couple of tablespoons of any curry paste you fancy and cook for a couple of minutes
- Then add a tin of tomatoes or a carton of passata and a bit of stock
- Bring to the boil, then add your meatballs and turn down to a simmer, simmer for around 25-30 mins until the meatballs are cooked through
- Then add either some coconut milk/coconut milk powder or chopped up block creamed coconut.
- Season, add some yoghurt or cream if you feel it needs it and then stir through chopped coriander if you have itSeptember Grocery Challenge £0/£2250 -
You could also try making some Swedish meatballs

Meatballs are good to add to curries and sauces when say the recipe calls for chicken breasts for example. Instead, make basic meatballs and add to a nice curry sauce. I had a korma sauce in the cupboard and didn't have any meat for it, so made some very basic meatballs (grated onion, salt, pepper), browned them in a pan and then added the sauce and had rice with it - lovely.
Errrrm, lasagna. And even Moussaka. I'm half Cypriot and although it's traditionally made with lamb, it does work with beef mince too. In fact, recipes such as Greek macaroni (meat pastitsio) and dolmades can work with beef mince included.
Stuffed peppers/onions/courgettes. Fry mince, onion, veggies in a simple tomato sauce, mix in some cooked rice and spoon into hollowed out veg and top with some grated cheese at the end.
Meat loaf.
When we get bored of spag bol, I do a pasta bake. Same mince recipe but mix pasta with it, stick in a oven dish, sprinkle over crushed up ready salted crisps and grated cheddar/mozerella for a nice topping.
Also good for fillings for jacket potatoes too, even when mince is just fried with garlic, onions and cooked in some nice gravy

i make up this mix in the bread machine
1.5 cups lukewarm water
3 tbsp olive oil
3 cups white flour (i use self rising it makes it extra light)
1 tsp salt
1.5 tsp dry yeast (for breadmakers, £1 pkt from Lakeland, keep in fridge!)
1tbsp dried herbs (£1.49 jar from lidl- parsley, garlic, leeks etc) (optional)
i put this in my breadmaker on the dough setting. when the dough is ready turn your oven on to preheat at 200C.
on an oil surface roll out the dough into roughly a rectangle (dough should be no more than 1/2inch thick). once it's rolled out shift it over to your oiled and floured pan. lay it out flat again and using the back of a spoon lightly coat in either olive oil or a tomato sauce. (bbq sauce or ketchup will do in a pinch or if you use lidl's sun dried tomatoes you can use that oil, gorgeous stuff!)
now you will fill with a mixture of mince, onion and whatever veg you fried up with it (make sure meat is cooked through). add extra sauce if you think it will be dry. toss in some cheese of choice.spread this out on the dough making sure to not get it more than 1/4 inch from the edges. once spread out gently roll the whole thing up, pinch the ends shut, make a few notches in the top to let the steam out and pop it in the oven for 20-35 minutes until a skewer going in comes out clean of dough!
this is soooooooo filling and tasty. they inside gets lighly gummy and nice, the outside is pleasantly crispy and the middle of the dough is like gorgeous fresh scones!
