Thursday: North african squash and chickpeas.
Is this the curry from river cottage veg? It is really yummy. I made it a couple of weeks ago, the only thing is I found there was too much stock added-I needed to really boil it down loads to get it a thicker consistency rather than just soup, next time will add half the amount (I think it called for 1.2l of stock!)0 -

Just changed my meal plan to accomodate Eliza's arrival which obviously threw us off track. We got home yesterday and was pleased I had stocked microwave meals in the freezer. But its not as nice as real food... so DH and I came up with this using what little is in the house.

Hope everyone has a good week xWe spend money we don't have, on things that we don't need, to impress people we don't like. I don't and I'm happy! Mortgage Free Wannabe :dance:Overpayments Made: £5400 - Interest Saved: £11,550 - Months Saved: 240 -

Here is my menu plan this week. Nothing exciting as still trying our best to save as much money as possible before we move.

Tuesday 17th – Omelette with cheese and salad
Wednesday 18th – Spicy chickpea and tuna patties
Thursday 19th – Pasta, pesto and cheese
Friday 20th – Chilli con carne and rice
Saturday 21st – LO chilli
Sunday 22nd – Chicken roast dinner
Trying to live a good life on little money :T0 -
Here's my mealplan for the week:
Monday - Chicken Tikka Wraps with Salad (1/2 pack chicken thighs)
Tuesday - Tomato Soup with Croutons (Tin from cupboard)
Wednesday - Beef Pie, Mash & Veggies (Top Crust only to save calories)
Thursday - Jambalaya (other 1/2 chicken thighs)
Friday - Meatball subs (1/2 pack pork mince)
Saturday - Pastitsio (other 1/2 pack pork mince)
Sunday - Sausages, Mash, Veggies & Onion Gravy
I'm going to start baking again (long story) but only the odd bit here and there. I seem to have completely lost my baking vibe lately. Anyway, hopefully shouldn't need too much in the way of shopping this week, so I'll be happy.Congrats, JG, on the birth of Eliza - hope you're both doing well.
