Red cabbage recipe wanted please.

    As your thread has dropped down the board I've added it to the existing one on cooking red cabbage where you'll find lots more recipes to choose from.

    I love pickled red cabbage and would really like to find a recipe for braised red cabbage - but without the sweetness of apples, raisins, cinnamon etc.

    Is it possible?
    Does anyone have a recipe?
    Or is red cabbage one of those foods that really needs the sweetness?

    I'm making a big batch because i got a couple reduced tonight. Making with onion, apple, sugar and sultanas. Got out the red wine vinegar, just about run out, so threw it in and got the white wine vinegar out. Nearly out of that one too, finished it off into the pot. If i need to add more vinegar am i better of adding balsamic, white, or malt to top it up. Might not make any difference just wanted to check.

    normally, it's white/red wine vinegar, but if you ran out any other kind will do. have you got cloves at all? when i make it normally i use a few cloves (if you haven't sub. with allspice), nutmeg, butter, bay and orange peel (optional, or a dash of orange juice) and let it braise in the oven for about an hour.

    ps. forgot to add, a dollop of redcurrant jelly (if none in, then any tartish jam will do)

    I'd use a 25/75 mix of balsamic and malt vinegar, but only if the balsamic was cheap. Not the good stuff. My old Ma always used to throw in a few caraway seeds into her red cabbage, it's the German way.
  • Sautee 4 chopped celery sticks with a chopped onion in a little oil for 5 minutes, add a couple of cloves of garlic if you like it.

    finely slice half a red cabbage
    grind 100g of brazil nuts until fine
    drain a can of sweetcorn
    dissolve 2 stock cubes in 250 ml boiling water with 2 tblsps wasabi paste or horseradish (more or less to taste - I use more, but then I love it tangy and hot)


    Add these to the celery and onion, bring to the boil and simmer for about 20 minutes until cooked. Season to taste with salt and pepper.

    stir in 2 tblsps chopped fresh parsley

    Enjoy over rice, or with mashed potato or a jacket baked potato - scrummy
  • Hi I love braised red cabbage and have only had it a few times when out in a restaurant. Could someone out there give me a good recipe on how to make it please?

    Traditionally red cabbage is braised with sharp, sliced apples but I do mine with 1/2 a sliced red onion in melted butter, lots of black pepper and a good grating of nutmeg. Cover the pan and give it a shake from time to time. 1/4 of a medium sized cabbage takes around 20 mins over a moderate heat.
  • We do ours in the oven either...

    with a little bit of vinegar (cider/red wine/whatever we have in) a splash of a more gentle liquid (apple juice or left over wine if we have that) and some cranberry jelly/jam/sauce stirred through it

    or,

    red apple, red onion and red wine vinegar as above

    Bung in a pyrex or similar, stick the lid on and leave it on until it goes all soft and sticky. I don't have set times or temps because it usually goes in around whatever is cooking in the oven. If it's on very hot it goes in for a shorter amount of time, I suppose ideally a slightly lower temperature for a longer time works. You can microwave it, we've done that before now.

    I love red cabbage.

    I did one the other day just cooked very slowly with just a drop of water, a few spoons of homemade cranberry sauce (with a slight chilli taste) and four clementines (segmented). I cooked this for quite a while on a very low heat on the top of the cooker with the lid on and then later added some chopped prunes and cooked a little longer
    It was delicious.

    You can really braise the cabbage with anything you want depending on your taste and what you will be eating it with.
    Everything has its beauty but not everyone sees it.
