Red cabbage recipe wanted please.

    I do know there wasnt onion in, it was just cabbage and apple but it tasted sooooo good! she used to serve it with boiled bacon (as she called it).

  • Does any one have a basic recipe for this? Have googleds but the recipes I have seen need lots of ingredianst and varies between using butter (or not) white wine vineger (or red wine vinegar), cinammon (yuk).

    We had some yesterday for a meal which was delicous so want to try it at hoome today. I was thinking some red wine vinegar, sugar and simmering the red cabbage in that - is there anything I am missing?

    I made some yesterday! You can do it exactly as you state and it is very easy to tweak. I did use the spices (cinnamon and nutmeg) but if you don't like them leave them out.

    The recipe I used included frying an onion in butter and garlic first, but you don't have to do this either if you just have cabbage.

    For one whole cabbage:

    Melt butter or oil in heavy pan
    Add shredded cabbage (remove the hard stalk at the bottom - easiest to do if you quarter the cabbage first)
    Add 3 or 4 tablespoons of brown sugar
    Add 4 tablespoons of vinegar (red or white)

    I did this in a casserole pot, put lid on and bunged in a low oven (150deg) for 2 hours, but see no reason it can't be left and stirred over a very low heat. The only difference I can think of is it may dry out a little more on the hob, but keep an eye on it and you can always add a splash of water if it does!

    Apologies also for the spelling mistakes in my first post - I was trying to peel veggies, post on here and renew our car insurance all at once!!!

    i layer up red cabbage, onion, apple , raisins, brown sugar and a splash of red or white wine vinegar. put that in the oven with a lid. lots of variations i think, i know somebody who puts bay and allspice in, no onion or raisins. put in what you like i suppose. the onion and apple seem to disappear.

    I braised some red cabbage last month, freezing it in many portions which should last me a while!! I cut up onions and fry them off with some granulated sugar to caramalise, then I add shredded apple (or sometimes large bits as it does disappear), spices and cabbage with a splash of white vinegar and stick the lid on and let it boil for half hour or so. Lovely.

    I do not always have the ingredients in so I use red cabbage, onion, apples, redwine vinegar, sugar and whatever spice I fancy but pepper is as good as anything. I do use butter though just to give it a bit of flavour, cooked in the oven with the pork its a very hassle free and tasty veg.

  • I use a recipe (tried and tested on my fussy OH) adapted from Tamasin Day-Lewis which layers up:

    shredded red cabbage
    peeled and chopped apples
    brown sugar
    bottle of cider
    cider vinegar
    cinnamon, nutmeg and pepper

    I'm sorry - i never use measurements (tend to use 2-3 apples for a large cabbage) and i'm holed up away from the cookbook at the moment but basically layer up a bit at a time some all the ingredients then pour over a tablespoon of cider vinegar and a good glog of cider onto each later and repeat until its all used up! I then cook it on the hob with the lid on for as long as I've got (the longer the better!) stirring occasionally.

    Smells lovely and freezes amazingly as well!

    May be too late to use tonight but just another alternative! :)
