Courgette Risotto
Risotto Rice (I think it is normally 50-75g per person)
2 Courgettes grated.
Frozen Peas
Chopped Mint
Dry White wine (glass) (optional)
Large onion
1ltr of veg stock
25g Butter
Melt butter in a pan and add onion, let the onion cook for a few minutes. Then add the grated courgette and frozen peas. Cook for a few minutes. Then add the rice and stir. Pour in the wine (optional).Then add the stock and chopped mint. You can also add some mixed herbs or other herbs. Just experiment. Simmer until cooked (normally around 20-25 minutes).
If you want it more creamy you can put a bit more butter in right at the end and stir in for a few minutes. Also top with grated cheese, either parmesan or something like strong cheddar at the end, adds to the taste.

I had never made risotto but tis easy.
I use frylight and not butter, done use the mint or wine.
Great hot or cold.

it seems nice and straightforward, which is what I like in a recipe!
I feel a bit under the weather todayfeeling a bit sick and very achy - hope I'm not coming down with something, I don't have the time! I'm going to try and take it easy today (although with teaching it's a bit difficult) and see how it goes. I've bought some soup with me for lunch, but at the moment I can't think of anything worse
but we shall see. Also got a smoothie to have in case I don't fancy the soup when it gets to lunch time.
I'm declaring today to be NSD 2 as I don't need anything.

So, another day. Still feeling pretty yukky - I've had a slice of toast with peanut butter and some red grapes for breakfast, but that's not helped much.
Got to school, then realised I've forgotten my lunch :wall::wall::wall: :mad: I've bought a yogurt with me, but forgot my soup and fruit. Grr, I'm so stupid. Shows I'm not with it though - don't normally forget!and, being the good MSEr that I am, I haven't got my purse with me so I can't be tempted to spend! So, just having a yogurt to survive on isn't going to do me any good at all. Stupid me.
