Hi, yeah I do make my own pasta sauce. I use tin of chopped toms, tom purree, garlic, paprika powder, a squirt of tom sauce, salt, pepper, maybe worchester (sp) sauce and I will add other bits all depending on what I am making, chilli, spag bol, shepherds pie, etc.January GC £33/200

Cut the veg into smallish chunks. Sweat (cook gently over a low heat) the veg in butter until it begins to soften, add stock and simmer until the veg are cooked.

It's also worth experimenting with the flavourings you add to soup. I love a hint of nutmeg in my leek and potato soup. A teaspoonful of cumin in roasted butternut squash and red pepper soup is delicious. I've also got a great big bowl of turkey stock to use up in my soups this week - yummy!!!I need to make a new list for 2014

Hi,
I make a soup with pumpkin (from my allotment) which I freeze in bags but you can use butternut sqash instead.
Fry an onion, a peeled, chopped, medium potato, a stick of celery, a red chille until soft. Add skinned, cubed pumpkin, a can of coconut milk, a chicken or veg stock cube and enough water to just cover the veg. Cook till soft and then liquidise.

My favourite throw together soup is red pepper and courgette.
Cube a red pepper (the long peppers are nicer but a bell pepper is fine), finely dice an onion, dice 1-2 courgettes, put in pan and fry slowly.
add 2 finely diced carrots, 1 large potato, garlic according to taste, ( i used minced about 1/4 teaspoon), bay leaves according to taste (i use 2) and fry for a little longer but don't let veg start to brown.
Mix stock about one pint or more if needed and add to pan. i use stock cubes one chicken and one veg. add salt and pepper to taste but some stock cubes are quite salty so taste first. cover and simmer on low heat until all veg is cooked, about 30-45 mins depending on preference.
I then use a potato masher to make a chunky soup as im not keen on blended ones. work around the pan until all the veg is smaller in size. take care not to scald yourself if you do this whilst its still hot!
serve with home made bread yum yum!

That sounds fine - blend it and add water/stock to get the right consistency and you'll have a lovely tomato soup. Curried carrot soup is my favourite.
1lbs carrots
onion
stock cube
1 teaspoon curry powder (more if you wish)
1 tsp lemon Juice
1 tsp of sugar
butter
Melt butter into pan, pop in chopped carrots and onion and sweat for 5 mins. Pour in stock, add curry powder, lemon juice, sugar and cook until carrots are soft.
I then put this into my blender. if its too thick, add a little water.0 -
The internet has a wealth of free soup recipes but if you were after a book, I highly recommend the soup bible. I got ours from the local garden centre for about £4.99.0

For a more 'soupy' soup with chunky veg, take out half the veg, blend the remainder with the stock, then put back the half you saved - a proper soup with chunky veg!
PS: Lovely tips here, I also add a handful of cooked beans, grated cheese and some hm croutons to make it a 'meal in a bowl'. To make croutons, chop up some stale bread (or use the heels), toss in some oil, salt and pepper and (optional) grated chilli flakes, and cook in the oven for about 10 - 15 minutes.I'm an adult and I can eat whatever I want whenever I want and I wish someone would take this power from me.
