Hi,
I was wondering if anybody had any easy soup recipes. We all like soup and would love to start making my own.

soup is SO easy if you have a blender or a stick blender.
I tend to always use the same base (onion and celery lightly fried) then whack in a heap of veg - literally whatever you fancy - with some stock, bubble for a bit, then blend. I'm sure someone will be along with some recipes!0 -

I only started making soup this winter, so I'm not an expert but I have mastered a vegi one which my whole family enjoy!
I use a pack of fresh chopped casserole mix (has onion, leek, carrot & potato in) £1 from Asda, another small onion, 2 sweet potatoes, 3 cloves of garlic & 2 chilli peppers.
Make sure everything is chopped to roughly the same size (I take the seeds out of the chilli's as I'm a bit of a coward) and put in a saucepan with a tin of chopped tomatoes and enough stock (I use a veg cube and a chicken stock pot) to cover the veg. Bring to the boil then simmer until the veg is cooked.
I use a hand blender to puree then put back on the heat and season until its just right.
The healthiness is then cancelled out by us eating it with a fresh french stick with lashings of butter!0 -
Hi, I am on a drive to use up everything in my fridge and so today made a soup out of 1 onion fried until soft with a tsp of cumin then added a bag of carrots, a potato and some veg oxo and hot water. Cooked until soft and then blended. It was yum. Oh, also added a couple of drops of pepper sauce for a kick!! easy tom soup(about 4 portions)
2 large carrots
equal amount turnip/swede
large onion
veg stock cube
tin toms
(anything else i find dying in the bottom of the fridge.eg leek/peppers/spring onions)
throw it all in a saucepan bubble till veg is soft, blend till smooth....season as prefered(i always add chilli powder for a bit of a kick)
serve with a swirl of cream if you have any and crusty bread...0 -

all cheap and cheerful! Mostly seasonal veg, and at this time of year, nice and filling, good for keeping the cold out. all you need to go with it is a baguette or maybe a couple of slices of wholemeal, and any leftovers will freeze OK. You should be able to pick up a decent butternut squash or a celeriac root from your local market, or a decent greengrocer.
Another good tip is to keep a tin or two of butter beans handy in the cupboard. Great for fleshing out a soup that has turned out bit runny, and adds lots of creaminess as well as fibre and vitamins :-)

If you want to experiment with soup a stick blender is a MUST! If you like tomato soup try the Roast tomato version. Just quarter a few large toms, put a sliced onion in there as well, and a red pepper cut in strips. Brush with olive oil, twist of salt & black pepper, roast in medium oven near the top. (This works best with slightly over-ripes and if you have cherry toms they`re good too but leave whole.) Whizz up with a blender, add a bit more liquid and a stock cube. Add a swirl of cream or Elmlea or fromage frais when you serve it in the bowl. A few basil leaves add taste & look good, serve with HM garlic bread. YUM.
Other favourite here is leek & potato. Many versions of this, ALL good! chopped potato, slightly overcooked. Leeks simmered in buttery stock, then chuck leeks in with spuds & zap with blender. Cream etc as with tomato soup, or stir in a can of evaporated milk. Make it into a `hearty meal` soup after the zapping stage with some cubes of ham, or cut up strips of crispy fried bacon. Or flake in some smoked mackerel, or some cooked `yellow` (smoked haddock). Can`t go wrong with either of these.0 -
A very simple one to try is potato and leek soup.
Heat a bit of oil in a pot. Add in some cubed potatoes, sliced leeks and a chopped onion. Soften for 10 mins then add in veg stock and boil. Add in salt and pepper and simmer til tender. Blitz with a hand blender or in a food processor, stir in some cream or creme fraiche and serve!
One of my favourites is a store cupboard soup. Fry some onion and some sliced chorizo or other meat you have lying in the cupboard. Add in any veg lying about, diced carrot, sliced peppers, mushrooms, celery etc. Add in two cans of chopped tomatoes and a pint or two of veg stock. Season well and add in some italian style herbs or spice mix. Add in a can of chickpeas, borlotti beans, butter beans, anything you have handy. Add in frozen peas, sweetcorn, broad bean, runner beans, again anything you have in the freezer.
Leave to simmer til the beans are soft and serve with loads of crusty bread :-)
With that recipe, I can make it anytime as I always have most if not all of the above in my cupboards or FF all the time xCan't think of anything smart to put here...0 -
