For a future idea, roast some Mediterranean veggies in the oven (light spray of oil so they don't stick!) and make some couscous with boiling water and herbs. Mix the chopped veggies through and serve/pot up and take for lunch.

Or mixed beans with diced cooked potato and salad - all tossed together

Thanks for the great lunch ideas dragon. Will keep them in my brain for packed lunch Wednesdays. They would also be great for home lunch too. Wednesdays are always packed lunch for me as I have to stay at work till 6. Before I used to end up buying rubbish from the school tuck shop. They have the most delicious sandwiches but always use a tonne of marge.

I've got to come up with a decent but healthy non bread/pasta packed lunch for tomorrow.

I'm probably a bit late - but how about quiche? You could even make your own, just a process of cracking a few eggs and whacking in some cheese/bacon/peppers/whatever the heck else you fancy. I'm certain theres some recipes online to cater to your taste.

also you could always make stirfry (to Dragon's idea) and add noodles if you dont want bog standard pasta. Would be easily rewarmable in a microwave.

Soup? - cheap and easy but if you need to be able to heat it then this is a problem.

Bean salad, any sort of salad just skip the lettuce and add beans / couscous / fish / potato (I make it up as I go along and usually governed by contents of fridge

  • Lots of great lunch ideas everyone. I actually ended up making parsnip pancakes that I got from bbcgoodfood. We don't get parsnips very often so I was very happy to see them in the shop this afternoon. I didn't use any oil for frying because of my non stick pan but used ss milk instead of water. I added a grated and squeezed cucumber to the yoghurt dressing, which I sort of made up as I went along.

They were really really good. I had 4 pancakes but made about 15! So will have to be controlled and not snack on them.

b, 2 inches of a cheesy thing (not sure what it would be called in the UK, but it's bad!)
l, 4 pancakes with cucumber and yoghurt
d, I don't know, probably not much as I'll be back from swimming late. Let's say a diet yoghurt and banana.
    e, swim this evening, 45minutes - 1 hour.

I also bought some scales today. We were planning our class trip today and it will involve a water park. Would like to NOT be embarrassed about swimming with a bunch of skinny teens this year. So I've got 10 weeks to get ready and thought scales would be the best way to monitor this.

So the damage is 9 stone 12.

I'm not sure what I should be aiming for, I'm only 5 foot 1. I've been looking at bmi and to put me right bang in the middle of the healthy range I should be 8 stone 3. That just seems tiny and complete madness! Although that might just be me being lazy. I know you have lots of challenges, the next one is the end of March right? I think I would like to have a go please.

It's 5 weeks away, so lets go mad and say I'd like to lose 5 pounds by the end of March.

    How do these challenges work?

Oh dear, I do babble on. Sorry!

First off emmaneni welcome to the challenge (basically you weigh in at the end of the week and say how much you have lost or gained and I update the spreadsheet and post the chart on here!)

Second try seeing what your weight should be at the top of the "normal" range and aim for that in the first instance - tweaks can happen later!

Thank you Dragon! :) Then can you put me down for 4 pounds (on closer inspection my scales only show 2 pound intervals, it's not digital.).

Normal is 9 stone 6. Much more doable. :D

How about Fry Light? :) I use it regularly when making pancakes etc.

Or you could use the Flora cooking oil.

Would love a oil spray but they don't sell them over here. :( Low fat is not really in their vocabulary. Most things are traditionally fried in lard. Most of them seem to still be really skinny though so they must be doing something right. :D

I think snacking is ok if you are snacking on good things. Caramelised biscuits sound very good, if a little naughty. :D

If you can get hold of olive oil and a plant mister you can make your own spray!
