I am toying with the idea of having roasted brussel sprouts with chestnuts (providing I can get the cooked vacuum packed ones - I bought the ones with shells one year and still shudder at the thought of cooking and PEELING another lot).
to me christmas veg are
creamed potatoes (with real cream)
roast potatoes
Carrots - boiled with butter added
Parsnips - roast with honey
Brussel sprouts - NOT overcooked! but lovely and just beyond al dente!
Peas - with a good knob of butter!
maybe a bit of pureed swede - not sure yet as the grandkids love that with sunday roast but not sure how the adults will react.
roasted butternut squash - the grandkids dont like it - but the adults do!
OH sod it - will probably do as I do every year - do them all and let them help themselves!0 -
Mushrooms fried with onions garlic and flat parsley (tastes better)
Acorn squash baked rubbed in olive oil and sprinkled with mace (very delicate nutty)
Garden peas sauteed in olive oil with shallot, dill and mint
Stuffed vine leaves with rice, sultanas and mint (can buy tinned) but can make them
Fried filo triangles filled with spinach, olive oil feta, mint and dill
Carrots baked like this: brushed with olive oil, sprinkled with cummin seed and wrapped in paper, when you open them the aroma is divine.
Pilau made with rice, sultanas, roasted pinenuts and chestnuts
Vegetarian mousaka using walnuts in the place of minced meat.
Chicory braised with cheese sauce
Braised artichokes in cheese sauce but they must not be the tinned ones

No way would I spend that much time piddling about with vine leaves etc! I want to spend time with the family - and they are getting a glorified Sunday Lunch!0 -

Not to worry, there is lots of choices, can have one choice from the selection, don't have all, the oven does most of it.
We had a superb dinner in Nanjing with DH years ago; invited at a dinner at a restau with officials from the local uni. They served us around 2 dozen courses each person, in tiny dishes and each one with its own sauce; that is a small one for the course and a much smaller one for the sauce and then the same for the next. course.., (delicious) there was only couple of bites in each dish.

PS Heston Blumenthal is a chef held in the highest respect and awe - and known for very complicated cooking methods and dishes of some complexity!!!!!0 -

You do not have to be cook celebre to do any above.The degree of difficulty is less with is the Acorn squash, peas and mushrooms.

One year I did 9 veg dishes! Toning it down this year... but we do like to have a lot left over for the bubble and squeak as that is nearly as important as the main meal. We froze a lot last year and were still eating it into late summer!

Carrot and onions (cooked slowly together with a little spice)
