Meal plan for the week is off to a good start already - had planned a cheap and cheerful pasta/pesto dish for tonight but my parents visited and mum had bought a sausage and pastry plait plus little potatoes, so that saved me money/hassle! :j Mum's are fab!
Anyway, menu plan for rest of week is:
Sun - roast chicken with potatoes, veg
Mon - steak with another portion of the potatoes and veg
Tues - fajitas with leftover chicken and peppers
Weds - jacket potato with hm bolognese from freezer
Thurs - pizza
Fri - jacket potato with baked beans
Sat - tuna pasta
I'm away with work from Weds-Sun so the meals are fairly quick and easy; don't want dbf to realise how easy some of the meals I usually cook are :rotfl:
Breakfast is branflakes with raisins; lunches are ham and cheese sandwiches Mon & Tues, then dbf is having fajita wraps (Weds & Thurs- using some of Tues' dinner) and pizza on Fri.
It's so satisfying to feel all organised!

It's on eof those 'in me ed' meals that comes out differently every time but this is the bare bones of it.
Chop the bacon and fry off in a little oil.
Add the sliced mushrooms and courgette cut into battons and saute until soft.
Chuck in some white white to deglaze the pan.
Add cooked pasta.
Stir in carbonara sauce (shop bought or HM, depending how busy I am)
Mix and heat through
Sprinkle with grated cheese and grill.Life's a beach! Take your shoes off and feel the sand between your toes.0 -
MATH-your menus sound scrummy. How do you make your lamb pasties?

Loobysaver wrote:Wow that sounds interesting. I haven't had Spam for years, how do you make them??
Chill the tinned spam so it 'cuts up neater'
Slice into fairly thin slices
Make up batter (destructions on the side of packet)
Dip the slices into the batter and deep fry
Eat
Notes: Mr Granddad used to fry, then re-batter and fry again and then repeat until they were like door steps:eek: .
We all know that deep frying is not very healthy so here is a little tip. Add half a tomato and a sprig of lettuce to the side of the plate and you render the meal calorie and fat free.:rotfl:Life's a beach! Take your shoes off and feel the sand between your toes.0 -

It's dead easy!
Brown off some miced lamb and chopped onion until the fat runs.
Drain and add a couple of good tbsps of mint jelly and a cup of cooked peas.
Roll out some puff pastry (I use shop bought) into a large oblong (my kidz tell me they're called rectangles now. LOL)
Arrange the mince mixture in a sausage shape down the middle of the pastry.
Cut into the sides of the pastry to make fingers and then flip them over the mixture to lattice the top.
Put on a large baking sheet, brush with beaten egg and bake for 30/40 min at 220 c
Serve with gravy with some mint jelly chucked in. I like to pour this throught the gaps in the lattice before I serve.
If you find the pastie dries while cooking, next time add a little gravy to the mix before assembling.
It's delicious with steamed veggies of any kind.Life's a beach! Take your shoes off and feel the sand between your toes.0 -
