    Loads in Uttoxeter Tesco this morning, bought a few more kits to keep in fruit cake for a few months. Can't really think of anything in the packs that will spoil by Feb but if it is looking like it will I'll just make a load of cakes as the recipe seems very like the one mum used to make and that was always made at the end of the summer hols to give it time to mature by Christmas so experience shows they keep for ages baked!

    it will be fine:)
    you should have left it to completely cool though before you put it into your tin:naughty: but as you will be decorating it and eating it soon you should be fine;) as long as the knife came out clean and you put it into the middle of the cake when you checked it then it's cooked stop worrying it's suppose to be heavy:rotfl:. enjoy your cake i bet it's scrummy:drool:

    You haven't done wrong with the knife - it is supposed to be straight down in the middle!!!

    Popped into Swindon tesco today (ocotal way) and they had boxes & boxes of them piled high. I picked a couple more up to use for birthdays in the new year

    Is 'feeding' the cake with brandy everyday abit excessive? I've been doing it for the last few days and wonder if I should stop?

    I have 'fed' mine for two days also, and today i pinched a bit from the bottom to taste it ,OMG !! its so yummy, this is the one that took 13 hours in the bottom simmer oven of our old Aga, i may not feed it again for a few days, then once more just before the marzipan goes on, im putting about a desert spoonful of brandy on each time, not sure what others are doing, maybe the cake experts can tell us ?

    I think you are meant to do it once a week (if you make it early November as is traditional), so may be a bit much- might make it soggy? It does say you don't need to feed it as the fruit is soaked in alcohol.

    Wow another Swindonian!! Lol. I went in their the other day and they said that had none *humph* where abouts where they? By the baking isle at an end like before?

    hi to all cupcake bakers, a little tip for you all, if some of you dont like the idea of having whole pieces of fruit in their cupcakes (mine didnt) the best solution is to put them in an electric chopper, and chop it to an almost mincemeat style mix, then add it when mixing the eggs etc with a electric whisk. makes a very nice cake into a very mourish light delicious cake hth

    :p oops thats me told then :rotfl:. thank you for replying i will certainly know for next time. hubby did enjoy still. also kept him quiet for a lot longer than usual to as he found it harder to chew :rotfl::rotfl:
    have now given up smoking since feb 13th 2014 loving the money I'm saving
