I'd not to be honest! Rice is actually quite a high risk food...there's an organism which commonly grows in cooked rice called bacillus cereus, and after a week it'll be hoaching with it! So unless you want to throw up violently...... (I was an environmental health professional in a previous life)0

It's fine to reheat rice as long as it's been chilled quickly after cooking and kept refrigerated. Once it's needed, and if you want to reheat it, then make sure it's piping hot before serving. If you want to use it in a cold dish, then use it straight from the fridge. I do both all the time, as do others in these threads:

The problem is when it's left sitting at room temperature or lukewarm for a long period while cooling, as that is the time that the bacillus cereus is in an optimum to multiply and cause problems. _pale_
Leaving it for a week (refrigerated or not) is, in my opinion, just asking for problems. If I save rice, I try to eat or freeze it within 24 hours.

There was also something somewhere about a bug that produced a toxin as part of its waste. While the bug was killed off by reheating thoroughly the toxin is left untouched.
