I came across a recipe for crispy lentils yesterday, to be used on food as a garnish. Just made some this morning and I doubt they will last long enough to be used in that manner, can see me just snacking on them. I used a combination of sea salt, smoked paprika, pepper, oregano and chilli flakes for seasoning, going to try Indian spices next time.

Crispy lentils sounds nice! I would never have thought to do that, actually. I think you would need the brown or the green lentils. I usually buy the red lentils as they cook quicker. I will buy some brown lentils and try that recipe in the next week, thanks.

I had Isa's recipe book at one point. I must have decluttered it in one of my tidying binges, lol.
I made masses of pasta e fagioli yesterday. I used lots of fresh veggies and some frozen veg as well so I made loads! I have 4 leftover bowls of it in the fridge so it looks like lunch is sorted out for the next few days.4 -
Wednesday, it does say in the article not to use lentils that turn mushy. I used green lentils which I had soaked overnight, now wish I had soaked more. I'll try with brown lentils next time as a comparison. There were some other good links on that recipe page which will investigate when I have more time.

To those thinking of crisping up the lentils, I'd advise just saute enough up for one day. I tried some today and they were a bit on the soft side, despite being in a sealed container, so they will be going into making a bit of a spicy soup tomorrow. I will have to experiment more on this with different lentils.5

Not really cooking obviously
but I had red pepper houmous on seeded toast yesterday with roasted chickpeas, chopped cucumber, tomatoes and spring onions on top. It was lovely!

I've been all over the place recently with food - I've got to get back to eating properly 🙈
I found a sad looking savoy cabbage in the fridge so I shredded it, shallow fried it in olive oil, added cumin seeds, ground coriander, ground cumin, ground ginger, a finely chopped garlic clove and half a finely chopped onion. Stirred until coated, added some washed sushi rice, stirred again, added 'chicken' stock and cooked for about 25 mins. Absolutely lush! I do cabbage, beans and rice reasonably regularly but this tasted totally different which is fab 😁
So, this week I am cooking Spanish potatoes - tinned chopped tomatoes, dried oregano, dried thyme, chopped onion and garlic, chopped green olives, chopped caper berry, tomato puree. Mix together and leave to stand while you prepare the potatoes - if large, peel, boil for 10 mins then slice. If small/new, boil whole for 5 mins then slice. Put layer of tomato mix on base of dish, add a layer of sliced potatoes, drizzle with olive oil and repeat finishing on a layer of potatoes.oven bake until potatoes are cooked through. You can add cubed vegan Greek cheese or similar to the mix or grate some on top if you want.
I'll serve with a warm asparagus, walnut, pear, maple and spinach salad.
I have a swede in the fridge and I love haggis so am going to make some - I will need to find a recipe for it though as I haven't made one for years! 😂 I'll let you know how I get on 😁

Loving the sound of those Spanish potatoes Squirrelgirl, going to give that a try when I get some potatoes from the market at the end of the week.
I have a feeling I have a recipe for haggis, will have a look and will post if I find it.2
