  • I buy the massel brand Wednesday 😉
It was lovely toast 😉 definitely recommended! I've found a couple of haggis recipes now....just have to decide which one to use - as I have buckwheat but no pearl barley, I'll be making it with that and just cooking a little longer 😉
  • Haggis was made! 😁 very happy with the result, I didn't follow a recipe as such - just kinda looked at a couple then made an amalgamation!!
Dry roasted some buckwheat in a pan, added some oil and washed puy lentils, stirred till coated then added veg stock and cooked for around 20-25 mins until just tender.
Finely chopped onion, garlic, carrots cooked down in oil and vegan butter until soft, added paprika, allspice, mace, liquid smoke, finely chopped mushrooms; stir and cook until soft. Added buckwheat and puy lentils, oats, chopped walnuts and veg stock into which you have dissolved marmite, mustard and miso. Stir and cook mixture until thick, spoon into bowls/ramekins/loaf tins and cook until firm.
I made one in a loaf tin, 2 ramekin size ones and a tray of mini muffin size ones 😁 got to say, they are so moreish the bitesize ones are great!! 😂
So, today I am going to use up the remnants of the seitan I made by slicing it and slow cooking it in 'beef' gravy - I'll use a massel stock cube, a splash of marmite and soy sauce- I'll be serving it with carrot and parnip batons in maple and mustard dressing; pan fried savoy cabbage in seed butter; and creamy horseradish mash. That will help clear the leftovers and stuff that is starting to get a little long in the tooth! 😉 I will do a menu plan later when I have gone through the fridge- too busy drinking latte at the moment!! 😂

We've been avoiding all social contact for a week as my husband has some health conditions and we need to stay healthy to care for my own elderly parents. We decided not to risk the current chaos in the supermarkets. I have just ran out of fresh stuff and how odd it seems not to have a fridge full of veggies. Like most of us I haven't really appreciated the luxury of easy access to the foods that I want. I have an online shop arriving next Tuesday and hopefully that will keep us going for a while. I've got plenty of staples like lentils and beans and rice and a small amount of frozen and tinned veggies. It's going to be a bit of a challenge as we're used to cooking from fresh with lots of salads which we buy every couple of days. I'm not complaining but wondered what other vegans are doing during the Coronavirus outbreak. What will be in your shopping basket if you need to self isolate? Do you have any recipes that you plan to use? I'm a little concerned that my diet will be less healthy but there's nothing really to be done about that. We've just got to do our best.

I am trying to distance myself from other people as much as possible but my husband is still working and I am noticing now how much fresh food I get through. I have frozen berries and frozen spinach and cauliflower in the freezer but I am going through my fresh fruit and salad stuff very quickly. I have a big appetite too! :)

I have to go out tomorrow to get a necessary prescription and I was just wondering what to buy at the shop. I have a grocery delivery on Monday but I think I will need more before that. I think carrots and onions as they last ages and then bananas and apples too.

Chirpycheap, sprout some of your lentils! I am currently sprouting broccoli seeds, green and brown lentils. I also always sprout chickpeas and other beans before cooking them so they’re easier to digest. Broccoli seeds especially are packed with nutrition! Lentil sprouts keep for a couple of weeks in the fridge if you make sure they’re dry before they go in but they normally get eaten much sooner than this. I put them on everything!

It is nuts to see fresh stuff decimated, how are people storing all the short life stuff like salads, I'd usually buy every second day.  I do hope people aren't panic buying it because it's there and then letting it go to waste.

I agree. The dishwasher is on more and we're using more loo paper and the house gets dirtier quicker so we're using more cleaning products than usual. Never mind. I'm sure that we will survive . Nobody is likely to be popping in for a cuppa anyway.
I went out to our local greengrocers today as I heard that the supermarkets were crazy. I bought lots of fruit and vegetables and with a bit of rearranging and eating up the bulky items in the freezer I am planning to freeze strawberries, bananas, blueberries and some blanched vegetables. I hope you found everything that you needed at the shops.

Thankyou Superpup that's a great idea. I have a long forgotten sprouter in the cupboard somewhere. I have sprouted mung beans in the past. Are the lentils and chick peas that you sprout the ordinary dried sort that I use for cooking or are they a special variety?

Yes, salad stuff is a real problem as it only lasts days. I've got some lettuce and vegetable seeds in my shed and I plan to get those started in the spring. Hopefully we will be back to normal by the summer when they crop but I'm ruling nothing out and at least I will be keeping active in the garden.

Hi, yes I just buy organic regular ones from my local shop but have bought online in the past or from supermarkets. I always buy organic where possible but you don’t have to, as long as the place you buy them from has a good turnover of stock they should sprout okay.
