Ooh sorry i didnt come back, well i would usually add stock cube or salt and pepper but as you are feeding it to littlun its best to leave the salt out anyway. Pleased it went well.
Now you can adapt it in loads of ways :)

if you make double the amount of anything you will in effect have 2 home cooked meals a week cos you could have, let's say, pasta bake on its own one night, then end of the week have the saved portions with some salad.

    Well done you :T

Have you got anywhere you could put an extra freezer? That way you can batch cook so there is always something to bung in the oven for 40 minutes when you come home? We've got a fridge freezer in the kitchen and another one in the garage and I could still do with more space and there's only two of us!

Keep at it and I know soup bases are handy but really making your own sauces is really straightforward once you get in the swing of it and the salt content etc. will be much better for your littlie than the tins.

Sadly no space for an extra freezer which is annoying as have been offered one in the past.

The salt content worry is one of the reason I have been so bad with cooking for him but as he now eats proper home cooked food at nursery so I must make the effort too.
  • I have tried to search for a recipe for this on here but with no joy. Folowing the rubber chicken idea the last few weeks and have done curries and casseroles but fancied a chicken pasta bake. Does anyone have the recipe or could point me to the right thread please?

Here are the ones I use:-

dice the cooked chicken and leave to one side.

Cook up enough pasta to serve as many as you like (put a vegetable or chicken stock cube in with the pasta when its cooking).

Sauces:- for a tomato one, a tin of chopped tomatoes, diced onion, a little garlic, good pinch of mixed herbs and a blob of tomato puree. Cook this until the onions are soft, throw in the diced chicken and the drained pasta. Stir through and serve.

For a white sauce, make a normal white sauce and you can vary this by adding mustard (only a little), and in a separate pan add a little honey to the chicken and stir fry on a very low heat and then put it all together with the drained pasta.
Add cheese to the white sauce, for chicken and cheese pasta. Or a little white wine to the sauce for chicken in white wine pasta.

All can be topped with breadcrumbs or cheese (or mushed up crackers, whatever you want to use up) and put in an oven to brown and crisp up.

    Hi Sharon,

This is one I make regularly. Chop up the chicken and part cook some broccoli and pasta. Fry an onion, garlic and some mushrooms and put aside. Make a (sloppy/wettish) cheese sauce or a white sauce is fine too. Mix all the ingredients into the cheese sauce season with black pepper and put into an oven proof dish. Top with any combination of breadcrumbs, crushed plain crisps and grated cheese and cook in the oven until heated thoroughly.

I made this earlier this week and threw some leeks and red peppers as well...any combination of veg will do.

  • I use cooked pasta with a tin of tomato soup (tesco one 48p) and a splash of milk, or use a mushroom soup (tesco ones on special for 40p instead of 48 at moment! so stockpiled :) ) Find the value soups too runny and yuk so best to upgrade.

The tomato one is similar to homepride pasta bake sauce, really creamy. Chuck chicken in or bacon mmmmmmmmmm

  • I chop up chicken and fry off with some bacon, chopped onions and add a tin of tomatoes, some chicken stock (about 1/4 pint) mixed herbs and paprika. Cook pasta separately and drain then mix all together and put in an oven proof dish and top with breadcrumbs and grated cheddar - delicious.

    Happy cooking.:D

I often make a fab fish pie with mushroom soup.

    1 haddock
    1 smoked haddock
    1 or 2 salmon
    mushroom soup

cook fish in oven, remove all skin and bones and mix together with campbells mushroom soup (i use small tin of 'light' soup) then top with mashed potato. put in oven for 30ish mins and serve with veg.

    yum
