I just made a really nice sauce by frying a finely chopped onion in a little oil, adding 2 tins toms when soft, pinch salt, pinch sugar and about a tbsp dried basil. Very simple and very nice.
Personally I'm not that keen on garlic in tomato sauces
PS you can add a tbsp of good quality olive oil at the end if you like, it makes it a bit richer and yummier (alas I'm dieting so didn't)0 -
I am Italian and I never used garlic for the sauce. I find that in Uk you are using so much garlic

For your sauce you can use onions or shallots...0 -

Dried basil works really well...in a tomato sauce for five of us I'd use about a teaspoon.

I never use garlic - here's my recipe
chopped onions, fried gently in extra virgin olive oil
(mince if using - fry until brown)
tinned chopped tomatoes
dried herbs - basil & oregano
stock cube (can be beef but I only use if using mince)
slug of Worcestershire Sauce
A squeeze of tomato puree
Slug of red wine
Plenty of black pepper
Also some chilli flakes depending on my mood
It seems to work well (note I dont cook with salt so that can be added to taste if required).

How much pasta do I need for one? It says 75 grammes per person on the bag but that doesn't look enough for me
I'll multiply the amounts and freeze the rest for tomorrow.

Hello all.
I've just cooked a nice simple pasta dish for my tea and I've, err, cooked a wee bit too much
If anyone wants to come round for a bite to eat tomorrow, there's more than enough to go round. Just make sure you park the coach safely
