Not easy because the weather is still going to be very warm into the early part next week.

Sunday = Roast chicken, roast potatoes, veg and stuffing

Monday = Chicken curry, rice and naan bread.

    Tuesday = Homemade Lasagne

Wednesday = Sausages, new potatoes and baked beans

Thursday = Pork loins, pepper sauce, peas and new potatoes

Friday = Fish, peas and new potatoes

    Saturday - haven't a clue yet!

I have got to get through the new potatoes as they were on BOGOF in Tesco and I am holding back a little on breaking into the new big sack of potatoes we have just bought as these have to last us through the winter to next spring!!

    morning all,

still trying to cope with the harvest gluts, and regretting not emptying the freezer in the summer!

made lists of stores and freezer contents a couple of weeks ago, everytime something came out another pot of stewed fruit or sauted courgettes went in, so freezer still full to bursting.. (need to stop putting fruit in now as have found summer 2010 fruit in there...

therefore, mealplanning needs to come from the freezer, this week when i've made space i want icecream in the freezer as that will make all this hot fruit more appealing

breakfast: pancakes, bacon and eggs, bacon butties, cereals.

packed lunches: carrot sticks, cucumber sticks, yogurts, homemade pasta salad, quinoa salad with onion, mandarin and peanuts, soup, slice of quiche, slice of cake/muesli bar (try to get away from daily ham sandwiches...)

    Sat:Lunch: soup and hm scones
    Tea: Chilli, cheddar and lettuce

Sun:Lunch: cooked breakfast, sausage, bacon, egg, mushroom, tomatoes.
    Tea:Chicken pie and veggies.

    Monday:Sausage and mash

    Tues:Chilli and rice

    Wed:tuna and sweetcorn tagelettelli

    Thursday:shepherdless pie

Friday: Use up contents of fridge challenge

    nov grocery challenge, £.227.69/300, 9/25 nsd: , 7 Cmo, 10 egm.
Me, 10 yo dd, and the dog. all food and drinks, in and out, plus household shopping.
  • OK, first attempt - mix of pre-cooked from the freezer and new stuff ...

Saturday: Chicken & Leek Risotto (1st attempt at this!:))
    Sunday: Sausage casserole & mash
    Monday: Chilli & rice
Tuesday: LO sausage casserole & chips
    Wednesday: Spag Bol
    Thursday: Chicken casserole & mash
    Friday: Lasagne

I got a huge bag of spuds recently that aren't great for anything except mash:( as they're still hard one minute and soup the next! I might try some as chips and see if they work for them.

I love Risotto but have never made it before - really as it's a bit of faff to make and doesn't seem worth it for one (especially as I know rice is "difficult" to reheat so don't want to have loads left).

  • Saturday: Chicken & Leek Risotto (1st attempt at this!:)

I love Risotto but have never made it before - really as it's a bit of faff to make and doesn't seem worth it for one (especially as I know rice is "difficult" to reheat so don't want to have loads left).

I haven't had a chance to try this recipe yet (there are six mouths to feed here!)

Left over rissotto needs to be put in the fridge as soon as it has cooled.

    Rissotto cakes

Leftover rissotto chilled over-night (approx) 450g
flour seasoned with salt & pepper
    2 eggs beaten
    4 handfuls of breadcrumbs
    2tbsp sunflower oil

Shape handfuls of rissotto into burger shapes.
Dip into seasoned flour, then beaten egg and coat in breadcrumbs.
Heat oil in non stick span and fry burgers for 4 mins each side.
Serving suggestion is crisp bacon and salad...

I read somewhere the key with rissotto is to add the stock a ladel full at a time... apparently the stirring bashes the rice and gives it the right texture. I am sure it will be great :)

Since I am here our meal plan is as follows:

Sun - Beef stew, Parsley dumplings, Mash and Cauilflower.
Mon - Asparagus rissotto and ciabatta
Tues - Baked meatball pasta and garlic bread (I will probably have some soup from the freezer and crusty bread)
Wed - Macaroni for the kids and Cherry tomato pasta for the grown - ups
Thurs - Burgers & salad (veggie burgers for teeny and I)
Fri - Veggie Cannilloni & Roast potatoes
Sat - Pizza, salad and potato wedges
Sun - Cottage pie & veg
