What about a big pot of stovies so you just have to heat it through and slop it onto plates yum yum
Or chilli that can be batch cooked into lots of portions and you could alternate what you eat it with. One week you could have it in wraps or taco shells with salad to have a mexican munch, another night on a bed of doritos covered with cheese, another night with rice etc etc
what is a stovie ?onwards and upwards0 -

Sounds like something you'd have with a deep fried Mars Bar.Liverpool is one of the wonders of Britain,
What it may grow to in time, I know not what.

I use my slow cooker or set the timer on the oven, so a meal is on the table as soon as I come home. Pasta bake is really good with some dried pasta and a jar of pasta bake sauce set oven timer. Job done. I serve it with some crusty bread. Simple tasty and filling!0

It is a potato and meat dish often made with corned beef. Kind of like corned beef hash but meatier. It looks like a pile of mush but tastes amazing.
Stovies tends to have onions, corned beef or mince or leftover beef, a bit of fat, oil or dripping and tastes fab.If you always do what you have always done, you will always get what you always got!0 -
Couscous is good. You can make it with a kettle in three minutes. Cold sliced meat from the night before and a bag of salad might be good.
Or, you could have some chicken stock at the ready from a previous meal (along with the bits of meat from the carcass floating in it). Take off the fat, put in two cups of rice, add a sliced pepper, some peas and a scant teaspoon of salt. Put in the oven at 170 C for half an hour. Your DH might be able to assemble this. Serve with salad.
Or, you could use your oven timer, if you have one.0 -

I think stovies vary depending on region, when i was growing up stovies was potatoes, onion and sliced lorne sausage all cooked together in a large pot on the hob, very fatty, very unhealthy, but very delicious.:rotfl:

I usually have a supply of ready made meals in the freezer, i.e. home made veggie chilli, which just needs defrosting and some rice cooked to go with it.
For really lazy nights there is fish, oven chips & baked beans or some frozen pizza.0 -
Pasta with some of a jar of pesto and some crisp bacon bits is my favourite very quick extra tasty dinner. Even easier than supernoodles!
For healthy, as already mentioned a stir fry is an absolute winner for quick dinners, and luckily you can buy the stuff so it's all ready to go very cheap from the supermarket nowadays. A very large pack of stir fry veg, and some ready cooked noodles are often on offer together at Tescos. The sauce and meat are obviously more expensive but still cheaper than a takeaway.
Another great quick dinner would be fajitas, and rather than serving it with rice which takes a little longer to cook you can try nachos - a jar of salsa, 2 cheap packets of tortilla chips 19p each in Tescos, and a bag of pre-grated cheese would cook very quickly under the grill and would be a great accompaniment to the fajitas.0
