    OH makes a fab sausage casserole which is quick and easy to make & could easily be done the night before.

    In a casserole dish put 1 chopped onion, 1 tin baked beans, some sausages (however many you want per person - it's up to you!), 1 tin chopped tomatoes, chopped mushrooms*, chopped pepper*, pinch salt, pinch sugar, teaspoon mustard, splash worcestershire sauce, squeeze tomato puree*.

    *only if you have them - you won't miss them if you don't.

    Put it in the oven around 170 (gas 5 I think) for 2 -3 hours (depending how long you have).

    I get in from work at past 6 most nights...its coat of and stragiht into the ktichen before the kids start eating the furniture...we eat all sorts - pasta, curries, stir fries... What about shoving something in the slow cooker in the morning/ before you go swinning so all you have to do is serve it out

    We go walking every Saturday and often get in late-and hungry.

    I've got into the habit of preparing Saturday's meal on friday. We might have curry and bought naan bread or rice which only takes 20 minutes to cook or chilli con carne again with rice. I also make bolognaise sauce the day before-pasta doesn't take long either or we might have carbonara which only takes a few minutes.

    You say that your DH is home when you get back from swimming-could you prepare a lasagne or pasta bake on Tuesday for him to put in the oven when he gets in?

    Thank you everyone. The sausage casserole sounds interesting, might have to try that!

    Just remembered I do indeed have a slow cooker that was an xmas present a couple of years ago, might have to try and find some instructions on how to use it and then put that into commision!

    I love sausage casserole and put in balsamic vinegar, which in my opinion makes it taste even better.

    Ooooh thank you - lasagne and pasta bake sound good - someone at work suggested using quorn? instead of mince? Apparently it has far less fat? Anyone tried that instead of mince in lasagne or something similar?
  • Stuffed peppers! You can cook the rice/veg and peppers before hand, leave them in the oven and heat when home - or even just cook a savoury rice when home and pop the peppers in the oven for five mins - quick and very nice tea :) Its always my back-up tea after late shifts xx

    I've occasionally used quorn If we've overdone the red meat! I don't notice a huge change in taste and it's handy because you can cook it from frozen. It's really quick, you can just pour out what you need and pop the rest back in the freezer. Also nice for chilli- just add chopped toms, chilli powder, kidney beans and any other bits you fancy and cook through. Serve with rice/ bread. YUM! :D

    Stir fry? Quickest dinner there is. If you have rice with it, the rice is the thing that takes the longest!

    I buy thin cut frying steak and finely slice it into strips. These take literally a minute to cook. Then I throw in stir fry veg - beansprouts, spring onion, pepper, baby corn, sugar snap peas, water chestnuts, chillis if you like a kick and stir fry sauce (I buy ready-made sauces). Cook for another 1-2 mins and it's done!

    If I want the quickest version I buy a pack of ready-chopped stir fry veg. Then it literally is a 15 minute dinner including rice cooking. If you chop all the veg yourself it's a half hour dinner.

    I've never bothered forking out for a wok - I just do it in a large frying pan. :)

    chilli con carne (in sc in the morning)
    pizza
    sausage egg chips
    hm quiche (warmed up)chips beans

    i would dust off the sc and fire it up in the morning...i like tomato based dishes
