If you go to a Chinese supermarket you can usually get packs of 50 spring rolls for a pound or two and fry them yourself at home. Spring rolls are my absolute favourite Chinese food so it's good to save a lot on those! To go with these I'll make a simple batter out of flour and water, add cooked chicken pieces and fry, serve with cheapy sweet and sour sauce on the top and serve with home-made egg fried rice (always soggy though :( ). I find that this usually satisfies my takeaway cravings! Although, nothing can ever substitute the carrier bag full of prawn crackers you get from the takeaway. I would buy one of these every day when I'm walking past the Chinese on my way home from work if I didn't think it was cheeky to just buy those and nothing else!

    Claire,

See that chicken coating I posted about above,It's excellent to make the battered chicked or beef as in the dry fried chilli beef or chicken.
Slice the chicken or beef thinly, make up a thick batter,I usually mix some of the black pepper one & the garlic one, about 40/50 ratio.Dip the meat in it & deep fry till golden.
Serve on a bed of rice with a sauce of your choice.I prefer the spicy chezwan one.

With fried rice you need to make sure that it's really dry before frying it so after boiling the rice leave it to drain for quite a while before frying. I usually leave mine for an hour at least and I know people who leave it for several. Also a very hot pan helps and stiring gently so the rice isn't crushed.

    Hope this helps :-)

Actually the rice is steamed rather than boiled.

Also, put it in the fridge to really cool down - this hardens it slightly (but it goes soft again when you fry it)

Not much help for today but the Asda chinese/curry counteris really good value if you want a take-away type meal at a fraction of the price. £3.50 for a meal for one: main course, rice, crackers/poppadom and a snack. I find that if OH and I have oven chips with it (nom!nom!) and usually some extra snacks (spring rolls/pakoras) from the stock in my freezer (bought as a party food pack from Iceland) then we can have quite a decent meal by sharing the £3.50 meal. If you have a £3.50 meal each then you're stuffed:D.

At the moment their meal for 2 (2 curries/chinese dishes, 2 rice, 2 snacks & 2 naans/poppadom/prawn crackers) is only £4. The do say not to re-freeze, but I always do & they're absolutely fine!

Lots of ideas, thanks guys. Now I'm starving, off to get some granola.

Before I go I managed to cobble together a chinesey meal last night.

1 x tilda quick rice, brown basmati
1 x jar of ginger & spring onion sauce
    2x sheets of dried noodles
    2 x chicken breasts
1 x tinned of stir fry veg

Chopped chicken, fried in groundnut oil (suppose to be good for reaching very high temp). Then add drained tin of stir fry veg.
Meanwhile, fried the easy cook rice (lazy I know) and added an egg which I scrambled to make healthyish egg fried rice.
Boiled some water and poured over the noodles.
Added sauce to chicken and veg, and a bit of water.
Served in chinese style bowls and spoons (must get red napkins, love that idea!)

    Nom, nom, nom. Loved it.

Asda do some nice vegetable spring rolls and I have some mayflower type chinese curry paste/sauce so maybe chinese again tonight!

    Hello,

On a wednesday night I take DD1 swiming and we don't get home until 6pm. It's then too late to start cooking tea as OH & DD2 are home and everyone is hungry NOW! So for the past couple of months OH has been picking up a takeaway every Weds night on his way home. This is kind of ok, but is now costing £12 per week and I'd like to cut this out if I can.

So does anyone have any ideas what I can possibly cook on a Tuesday night and keep in the fridge and just heat up on a Weds night? Things like stews or casseroles spring to mind but I don't know any recipies and I'm no good at just throwing stuff together!

I think it might have to include sausages, chicken, or fish for it to go down well with the family lol!

Anyone got any handy receipies they could share?

    Thanks, Dizzy x

Scrambled eggs and toast, or omelettes.
  • Well you could go 3 ways.

1 - This is your 'take away' night and not friday/saturday etc.

2 - Slow-cooker dinners are easy, if you've got the 5-10 mins in the morning to prep & put everything in the cooker to leave. I love coming home to have dinner all cookde and the smell is lovely! :p

3 - If DD is a swimmer, eggs (scrambled / poached / boiled) are a good source of carbs & energy and is nice & healthy dinner. We also have fresh pasta & sauce for our 'working late' nights which literally take 5 minutes to cook.
You could also do this with a big batch of Spaghetti Bolognese and leave it on the counter to defrost during the day, so all you have to do at night is heat it up and cook the pasta.
Soup is also nice, in the winter months, and you can bulk it up with twirly pasta (I usually do this with a tin of cream of tomato).

Hope this helps and I'm sure others will be around to add things where i've missed.
