  • I always like to add a bit of spring onion/scallion to my mash to make champ......after draining the potatoes I put a knob of butter in the bottom of the pot and quickly fry the chopped scallions then put the spuds back in and mash it (it's called champ in Ireland) . Also adding a small handful of cooked cabbage to mashed spuds and giving it a mix for some colcannon.

    Also, try a little grate of nutmeg over any of the creamy potato recipes above........lovely!

    Frizz, what do you serve the butterbean mash with? It sounds gorgeous. (And a great way for a veggie to get loads of protein.)
    Ainsley suggests serving it with his HM Chicken Kievs - which are gorg also - but no good for a veggie! :( Warning, it is very filling, personally I could eat it on its own, particularly if you jazz it up as he suggests with chopped coriander and tabasco sauce.

    I read in a mag this week about boiling a beetroot with your spuds to make 'em pink when you mash 'em :D

    Sounds really crazy I know, but for special occasions I use a glug of Baileys instead of milk for mash. It really is something special.

    My other favourite is grilled potatoes.
    Thickly slice potatoes (no need to peel them) and boil untl just tender. Pat dry and score in a cross kind of pattern. Brush with olive oil (peanut oil is also nice). Sprinkle on some salt and pepper and bung under the grill for around 10 mins each side, or until they are a nice colour and crispy.

  • Unique yes, it's one acquired from our Slimming class......along with the quiche without pastry, and also Doritos made from lasagne sheets!

    Last night, I turned a whole load of mash in to HM fish cakes, HM veggie burgers ... and HM Potato Croquettes.

  • Mine have only had butter, milk and pepper - I feel like I've been kept out of some big secret. Will give some of these a try... ;)

  • Whizz up some cooked bacon, parmesan and basil in the food processor then add it to the mash. I saw this on tv a few years ago and it's really tasty.
