    Fraid I cheat with my moussaka . Make a usual mince and tomato sauce [as you would for spag bolog] and a cheese sauce. I part boil sliced potatoes and either lightly fry or micowave an aubergine and then slice. Finally I layer the meat/tom sauce, potatoes and auberine and then finally top with cheese sauce. Then cook in oven for approx 25-30 mins.
    Lamb mince in this is brilliant
    We don't need to do it perfectly - good enough is exactly that GOOD ENOUGH.

    Chicken and wine casserole - chicken breasts [can be chopped up if prefer] lightly browned, with onions, peppers and mushrooms, stir in tin of chopped tomatoes, season and herbs to taste and large splash of wine......put in slow cooker.

    Or if really lazy instead of tin tomatoes, seasoning, herbs and wine....use a chicken tonight sauce
    We don't need to do it perfectly - good enough is exactly that GOOD ENOUGH.


  • I used feta once as the topping on my moussaka as I had some left in the fridge - it was lovely! Now I always do it that way.

    how long do you microwave an aubergine for? I've never done them that way.

    Taken from my sarah brown microwave vegetarian book:
    'Trim the aubergine and pierce skin' Wrap in absorbent paper and microwave for 3mins 600w; 2 1/2 mins 700w; until tender but still firm, turning over halfway through. leave to stand for 4 mins , then slice thinly'

    I looked it up as I wanted to give you the correct info and not just what I thought it was.....think I do it for about 3 mins in my microwave

    Ok so I would like to spend a whole day cooking several meals which I can simply freeze to make my life easier in the week. My partner works away in the week and I find that I do not bother to cook for me as I generally don't eat due to trying to get the children sorted out, bathed fed ready for bed and tidy up their mess all within 3 hours! so what I am looking for is simple but tasty meals which can be bulk made and frozen (we have plenty of takeaway boxes)

    i know I can freeze Cottage pie which all 4 of us love, also the freezing of food would also be occasionally used at a weekend if we are busy doing visiting etc.

    please can anyone help me! I saw a thread the other day about freezinf rice and pasta but now can't find it! :(

    hi rusty flange,

    there is loads that you can make in bulk and freeze!

    This is the kind of things i do...

    spag bol sauce
    lasagne
    pasta bake
    chilli
    curries (veg or meat)
    HM soup
    mince with or without dumplings (nice if you use lamb mince and put a couple of spoonfuls of mint sauce in the gravy)
    fish pie
    beef / lamb stew

    let me know if you want any recipes - none of them is difficult.

    I have made a chunky chicken and vegetable soup before and froze it, just happened to forget about it!

    another silly question things like lasagne and cottage pie how is best to reheat them after cooking? I make a mean lasagne but have never frozen it before and the same with cottage pie ... I also have it the next day and reheat in the microwave :)
