Bit late here but going to still post a menu plan for the rest of the week to help me remember what I'm supposed to be doing and when to get things out the freezer to defrost!!

Tues 6th - spicy carrot soup and bacon butties
Weds - roast chicken with couscous and vegetables
Thurs - chicken bake - left over chicken in a white sauce with mushrooms and cheesy breadcrumbs on top - with veg
Fri - leftover chicken with black bean sauce and fried egg and sweetcorn rice - rice boiled in stock made from the carcass on thurs
Sat - HM burgers with hash browns and beans
Sun - mince and tatties with stuffing dumplings and cabbage
Trying very hard to be frugal and OS - just plodding on and doing my best!

I do my shopping on a thursday so my planner is a Thursday to Thursday... have the next 2 weeks planned out

8th - Tomato and basil pasta bake

9th - Fish Fingers chips and veg

    10th - visiting family
    11th - visiting family

12th - vegge Pizza and garlic bread

13th - Sausage, mash and veg

    14th - macaroni cheese & garlic bread

15th - giant yorkshire and roast chicken n veg

    16th - chicken n veg pie

    17th - visiting family
    18th - visiting family

19th - chicken n garlic stir fried rice

20th - pork chops and jackets

21st - pepperoni pizza and garlic bread

22nd - roasted belly pork with apples and sweet potatoes

Including fruits, deserts, breakfast cereals and all the other sundries the grand total is £52.... that includes my meat all coming from a local organic butcher who delivers free and by buying the cheaper cuts. My kids have school dinners and I tend to just make a sandwich for lunch at work.

I admit I am very very lucky in that we tend to eat at my folks on a weekend which certainly makes a BIG difference to my budget.

    Thanks.

They are both quick & easy

Piri piri chicken is made with a piri piri marinade from Alid & stirfried.

The pie is diced pork & apple simmered for about 20mins in a pork gravy. Put it in a pie dish & cover with ready made pastry. I use filo or shortcrust.

sounds great and easy! will definately give them a go. I love nandos restaurant and buy a bottle of their sauce from asda atleast monthly, its 2.48 most of the time though which is quite expensive! so will have to try that marinade :) thankyou!
