    Hi isualive,

I have a Morphy Richards fastbake breadmaker and I find the fastbake function very useful when I need some bread in a hurry. The fastbake loaves are good but I don't find them quite so tasty as the regular slow baked ones and they do seem to go stale more quickly.

You should get some more help and advise on the Old Style board so I'll move your thread over there.

The Complete Breadmaking Collection might help too.

I have a Morphy Richards too. I find fastbake gives a very cakey texture to the bread and don't like it at all. I always go for the full length programme. I haven't succeeded in making brown bread in it though - I've tried some of the recipies posted on OS and they have all come out like bricks, but the white bread is good.

I have been wondering about fastbake, what would you say are the main differences between it and a normal bake? (apart from time of course!)

    Thanks

You use more yeast to get the loaf rise quickly ..around an hour and the bread is not as light ..panny SD 251

I have a Morphy Richards fast bake and the fast bake setting doesn't make a good loaf at all.

I have a Kenwood RapidBake and only use the shorter program if I need a loaf in a hurry. It's passable, but doesn't really rise as well - plus there's more faffing about at the beginning, what with heating the liquid and all....

However, it's great if you run out of bread and don't have time to go out for some.
