    How abouy a chilli twist on your bolognese sauce? Just add chilli powder to taste (and chopped real chillis if you like it really fiery!) and some tinned kidney beans (baked beans work too) and serve with rice instead of pasta.

    Or make a fruity tomato sauce (tomato/onion/garlic with chunks of apple, dried apricot, sultanas etc) seasoned with ginger and cinnamon (or you could cheat and use Morrocan spice mix!) and have it with cous-cous (or rice) for a sort of Morrocan chicken-style dish.

    Wasn't there a pointer to some Food Safety Site recently that said you could refreeze safely if items had been defrosted and kept in fridge?

    Roast chicken made a chicken pie with 2 huge portions, risotto for 2 and then either a stew/meatballs and approx 1.5L chicken stock (some used in the risotto and rest frozen)

    V.pleased with this result as the pie was potato topped with old tatties and a tin of sweetcorn languishing in the cupboard.

    Not bad result methinks when a few years ago would have chucked the remains out and the carcass

    Those both sound gorgeous! And especially apt as I've just found some stray red kidney beans in the freezer this evening :).
    I've never tried Moroccan but I love sweet fruit in savoury sauces and I've got all the ingredients.... except the tomatoes but I'm sure I can get some on the way home from work.

    I missed it but I'll have a look back at old posts, thanks. I think as long as things keep below 5C, although bacteria grow, they only grow slowly, it's over that temp that they have field day.
    Stuff like bread can be refrozen I think.

    Last night I made pie for tea. The filling was leftover roast beef, roast pork and roast chicken from the freezer, with a little home made gravy, also from the freezer. I grated the end of 3 little lumps of cheese on top of the filling but beneath the pastry. It was delicious. And it was delicious cold for lunch today too.
  • I'm happy! I rescued 3 apples I had in my desk drawer at work by taking them home, peeling, coring and chopping them, and then stewing them with a little water, a tiny amount of sugar, a good shake of cinnamon and some mixed spice. Then, I used a small amount to put in a basic muffin recipe (I replaced the raspberries in the recipe) and made spiced apple muffins. Even better bonus, they are low-fat!

    And DH wanted to take some around to a friend's house for them to try. Now I feel happy. :)

    Earlier in the week I had left over roast chicken so I made stuffed roast peppers with chicken and spicy cous cous. They were absolutely delicious.

    Had the family round for lunch yesterday out of the blue so i used up the rice i had cooked in the week and fried this with some vegetables. I also had some tinned tuna which i cooked with some onions, tomatoes and spices. I was cooking some cookies and bread so we had that as well. Turned out quite well as normally i would pop straight to the shops but as i did not have time i had to make something out of nothing. Plus everyone complimented me on my rolls. :D

    Just making chicken stew using broth from a chicken carcass I froze - didn't have time to make the broth at the time, so just shoved the whole carcass in a bag and froze it. Yesterday emptied bag into a saucepan, added water to cover, a halved onion and a good pinch of salt; simmered for a couple of hours and the broth is beautiful!
