Can you really OS on pasta sauce?

    The only tomato product I use for pasta sauces is organic tomato puree and organic "passata" (a tomato product suitable for pasta sauces and pizza toppings). I then use it in the sauce I make myself all from scratch. I do not like the cheap tinned tomatoes - most of us Italians don't.

    I do buy a readymade tomato sauce then I jazz it up - I get the Asda extra special garlic and tomato one then saute mushrooms in olive oil, add the sauce, throw in a few olives and while that is doing I do some fresh pasta (takes about 4 mins). I add the sauce to the pasta and stir in some stinky soft cheese - either blue or goats cheese. This is a quick evening meal and one which I enjoy - I could make my own sauce but choose not to in this case - whatever suits the person I think.

    I think the gist of the thread is use the best quality ingredients you can afford and make your own! :D

    Fresh Toms in summer of course.

    Passata is quite thick - it is sieved, not pureed. It works well as a sauce base.;)
