    Hi Riversong. I'm a newbie here so sorry if this is not of any help but Mr T is selling Shahida Halal Frozen Chicken (1kg) for £2.99 and it is currently BOGOF! and the same brand frozen drumsticks (1kg) is £1.24.

    Buy a large chicken, - remove the breasts with fillets, remove the drumsticks, thighs and and wings.

    Meal one - Stir fried chicken with vegetables and served with rice (use one breast)

    Meal 2 - Chicken Goujons with mashed potatoes and vegetables (use 2nd breast)

    Meal 3 - Chicken casserole with lots of veg and dumplings (made with thighs, drumsticks and wings.

    Lunch or supper option - Chicken Noodle Soup, made by boiling the carcasse for stock.

    I would roast the chicken on the Sunday. On the Monday, strip the remaining meat from the carcass and add some of it to a white sauce (flour, butter, milk, seasoning) together with mushrooms for a chicken a la king served with rice. That can be served for 2-3 days. Add remainder chicken to vegetables for a stir-fry. Meanwhile make a soup from carcass and veg.

    Having just cooked a roast chicken last night I will share my meals ( I plan to get 4 seperate meals out of it)

    This was to feed me and 2 DD's (6 & 7).

    Roasted the chicken, the girls had a leg and the wings each, I then stripped the chicken bare and will use some meat to make chicken fried rice. I then plan to make cajun chicken soup with the left over pieces, and this evening am boiling up the carcass to make chicken and sweetcorn soup.

    So roast dinner,
    Chicken Fried Rice,
    Cajun chicken soup,
    Chicken and sweetcorn soup.

    Last week we had a Chicken roast on the Sunday using the legs, 1 breast, and some meat from underneath.
    Monday, Chicken mayo & sweetcorn sandwiches for lunch & Chicken curry for dinner.
    Tuesday- A Chicken noodle soup with HM crusty buttered rolls.

    Every Chicken we buy I chop the wings straight off & freeze. We never miss them then as soon as we have 20 or so I make hot spicy Chicken wings for a pick in front of the T.V on a Sunday night. Always a family pleaser :)

    I just bought 3 chicken as I needed set portions for four people (Chickens were 3 for £10 or £4 each).

    I got enough to feed 15+ from these but there are some large portions (from the breast) so I could have got more.

    I took off the legs and then cut into 6 Drumsticks & 6 Thighs (2 drumsticks or 2 Thighs per person) and then a mix of 1 Drumstick & 1 Thigh each for another portion (6 portions).

    I took 1/2 a Breast with wing attached (you could easily remove the wings and use several as a meal), but removed the Gudgeon shape piece of meat from the underside of the breast plus trimmed up other meat to make the breast a smaller size (6 portions - you could cut even more off to stretch the amount of meat / portions you get from the bird).

    With the remainder of the meat I trimmed off this gave me 260g of meat that will do for two of us (2 portions).

    This left me with the carcass which I boiled up and then removed all the meat from the bones to give me enough meat for one for a soup (1 portion)

    The Carcasses made me 2 1/2 litres of stock which was used with vegetables to make loads of soup, either a starter portion or a meal sized portion (at least 12 portions, by adding parsnips, carrots, celery, onion, mushrooms & curry paste).

    Average meal cost per person, per portion 66p, not counting the stock

    So you can make a single chicken go a long way, from your one chicken you could get at least enough for four meals, and if you can buy several chickens on offer to reduce the price, a larger bird or a reduced price then you will get more meat or cheaper per portion meals.


    (Always cheaper to buy a whole chicken and portion than to buy ready portioned).

    I made a big Thai chicken curry the other night, but I was cooking for my brother too, so knowing he hates most curries I put some chicken aside to make him faghitas or something.

    He ended up liking the curry (fussy beggar) so now I have a chicken breast cut into strips and not teeming with ideas for it. (don't fancy buying wraps just for one chicken breast)

    I thought about breading and frying them, but I don't have a deep fat fryer, don't want to buy litres of oil and wouldnt know what to serve with chicken strips/goujons anyway.

    Any exciting ideas?

    You could put it on a pizza, in a pasta dish. Make a chicken pie, have it with a salad, in a sandwich, with some mash, in a soup, with noodles/rice and veg for a stir fry, in egg fried rice. Any of those take your fancy? :)
  • If you have any risotto rice, chicken risotto can make one chicken breast feed a family.
