    On sunday we had a roast chicken with roast pot, mash pots, mixed veg, yorkie pud and gravy...

    Stripped the chicken of as much meat as possible and have slow cooked the carcass with carrots and leeks leftover from last week. I will use this as stock for chicken using a bit of the leftover chicken from sunday!

    I have added chicken and stuffing to couscous for lunch today and yesterday.

    leftover veg was mixed with mash for bubble and squeek.

    Got enough chicken left for a curry and chilli or pasta bake!

    We will look like a chicken by the end of the week!

  • I also love doing the leftovers after a Sunday lunch, and it's why I think it's worth buying a free range chicken because for the same weight there is more meat- non-free range being injected with water. Also, the meat has more flavour-a chicken is the only meat I buy now as I'm trying to spend only £50 a week on food for both of us for 3 meals a day.
    As a change from curry etc, I sometimes make a chicken flan. Bake pastry blind, then make a white sauce, add the chicken and any bits of leftover cheese plus mushrooms or leeks or onion. Bake again for 25 mins. There are only 2 of us, so that does for 2 more meals! Hurrah for chicken!

    sounds great.....very :money:...we often have a chicken pie/chicken fried rice/chicken sarnies with the left overs.. always well received by the kids which is helpful

    Pastry is one of those things I'll buy and put in the freezer when it's on special offer, particularly puff pastry. I do make shortcrust sometimes.

    I can't actually decide what I want to make .... Chilli chicken, chicken curry, chicken casserole... whatever I make will go into the freezer i think as can't eat chicken all week (well hubby doesn't want to).

    I must buy some pastry next time im out and about and have some spare cash

  • I cooked a chicken yesterday evening. I'm adding some to a curry this evening but I have more from the carcass than I expected.

    Will the remainder keep till tomorrow where I intend putting it in a pasta bake?

    If you do not plan to eat it soon I would make into a meal you can freeze or freeze to add to a meal later (okay to defrost raw meat cook & refreeze), rather than hope you remember to eat it later.
